Winter special Khandeshi Gurmai Roti

Ingredients

For Dough

  • 2 cups Wheat flour
  • Salt to taste
  • 1 tsp Ghee
  • Water

For Masala

  • 1 tsp Dry Ginger
  • 1 tsp Cinnamon
  • 1/2 Nutmeg
  • 1 tsp Black peppercorns
  • 1 tsp Cloves
  • 1 tsp Green cardamom seeds
  • 2 black Cardamom
  • 1 tsp Gathi pimpli

For Stuffing

  • 1 1/2 cup Jaggery powder
  • 1 1/2 tsp Gurmai roti masala
  • 1 tsp Ghee

For Gurmai Roti

  • Ghee

Instructions

For Dough

Step 1: Take wheat flour, salt, ghee in a dish and mix everything well together.

Step 2: Add a little water at a time and knead a little soft dough like chapatti dough.

Step 3: Cover and rest the dough for about 30 minutes.

For Masala

Step 4: Pound dry ginger a little and transfer it into a blender jar.

Step 5: Add cinnamon, nutmeg, black peppercorns, cloves, green cardamom seeds, black cardamom, gathi pimpli, lendi pimpli and blend everything into powder.

Step 6: Strain the powder and gurmai roti special masala is ready.

For Stuffing

Step 7: Take jaggery powder in a dish and add 1 1/2 tsp gurmai roti masala, ghee.

Step 8: Mix everything well together and blend it well once.

Step 9: Transfer the stuffing into a dish and roll ladoos from it.

Step 10: You can make around 6 ladoos from this mixture.

For Gurmai Roti

Step 11: Take the dough and knead it well once.

Step 12: Make small balls from the dough and take one of them.

Step 13: Make the dough ball smooth and even and roll it into small disc.

Step 14: The disc should be thick at the center.

Step 15: Fill the stuffing ball into the disc and seal the edges well.

Step 16: Remove the excess dough and pat it well between your palms.

Step 17: Roll the disc into as thin chapatti as possible carefully.

Step 18: Heat up a skillet on low to medium heat and transfer the roti on it.

Step 19: When lower side is roasted a little flip the roti over and spread ghee on upper side.

Step 20: When lower side is roasted well flip the roti over and spread ghee on upper side.

Step 21: When the roti is roasted well from both sides take it off on a cooling rack. Gurmai roti is all ready.

Step 22: Store the roti in an airtight container when it cools down completely.

Khandesh special gurmai roti

Notes

  • Koranjan, sadhi pimpli is also used in this masala.
  • You can store this masala and use while making tea or masala dudh too.
  • Avoid using dry flour while rolling the roti. You can use a little oil if needed.
  • It has shelf life of about 8-10 days.
