Dal bati is a Rajasthan special recipe. Bati made from wheat flour are served with hot spicy dal and lots of ghee. This tastes just awesome. Ingredients

For Making Bati:

  • 2 cups Whole wheat flour
  • 1/2 cup Ghee
  • 1/4 cup Warm Water
  • Salt to taste

For Making Dal:

  • 1/2 cup split moong dal
  • 2 tbsp Chana dal
  • 1 1/2 cup Water
  • 1 cup finely chopped Onion
  • 1/2 cup finely chopped Tomato
  • 2 green chilies chopped
  • 1/2 tsp Hing
  • 1/2 tsp Turmeric powder
  • 1 tbsp chopped Garlic (8-10 Garlic cloves)
  • 1/2 tsp Cumin seeds
  • 1 tbsp Red chili powder

Instructions

For Making Bati:

  • Take wheat flour into a dish and add salt.
  • Mix well and add ghee.
  • Mix ghee well with wheat flour.
  • Ghee should be mixed well with wheat flour and you should be able to roll a ball from flour.
  • Add a little warm water at a time and knead thick dough.
  • The dough should not be soft as chapatti dough.
  • Take out small ball from the dough. You can decide the size of the bati.
  • Press the ball at the center from all sides so that it will get cracks.
  • Roll it into a ball again and press it at the center.
  • Repeat the procedure 2-3 times.
  • Put a jali that is used to roast fulka or papad on the gas.
  • Turn on the gas on very low flame
  • Place the batis around the flame on the jali. Do not place any bat on the flame.
  • Remove the whistle and rubber ring of the cooker lid.
  • Place the lid on the jali and roast on very low heat for about 10-12 minutes.
  • Remove the lid and flip the batis over.
  • Roast the batis from another side as well. No need to cover these with cooker lid this time.
  • Take the batis off into a dish.
  • Take a cooker and place a stand that is used to place hot vessels at the bottom of the cooker.
  • Put a dish on the stand and put batis on it.
  • Remove the whistle and rubber ring of the cooker lid.
  • Cook on medium heat for about 15-20 minutes from one side.
  • Remove the lid and flip the batis over.
  • Again close the lid and cook for about 20-25 minutes from another side as well.
  • Take the batis out into a dish.

For Making Dal:

  • Wash and soak chana dal in enough water for about 2-3 hours.
  • Transfer the moong dal and chana dal into a pressure cooker.
  • Wash it really good with water 2-3 times.
  • Add water, hing, turmeric powder, and mix well. You also can add salt if you want.
  • Close the lid and cook on medium heat until 5 whistles.
  • Open the cooker and beat the dal really good.
  • Heat up a pan on medium heat. Add ghee.
  • Add cumin seeds and let these splutter.
  • Add hing and garlic.
  • Mix well and fry until garlic turns light golden.
  • Add onion and fry until it gets light golden color for about 5-7 minutes.
  • Add tomato, green chili, red chili powder, and mix well.
  • Fry until tomato is cooked well and gets mashed well with onion for about 4-5 minutes.
  • Add beaten dal, water to adjust the consistency and salt.
  • Mix well and cook on medium heat for about 5-6 minutes.
  • Add coriander leaves for garnishing and mix well.
  • Dal is ready.
  • While serving, take dal into a bowl.
  • Serve the batis and add lots of ghee on it.
  • While eating crush the bati, add dal, and enjoy it.
