Dal gandori is a Khandesh special recipe. This is a type of dal that is very easy to make. It tastes just awesome. It is a healthy recipe too as it has lot many leafy veggies. Ingredients

  • 1/2 cup Tur dal
  • Water
  • 1 tsp Garlic paste
  • 1 tsp Ginger paste
  • Slit Green chilies
  • 1 chopped raw Tomato
  • 1 cup finely chopped Ambat chuka / Green sorrel
  • 1 cup finely chopped Spinach
  • 2 tsp Oil
  • 1/2 tsp Cumin seeds
  • Curry leaves
  • 1/4 tsp Hing
  • Finely chopped Green chili
  • Raw Peanuts
  • Dry Coconut slices
  • 1/4 tsp Turmeric powder
  • 1 tsp Khandeshi kala masala
  • Salt to taste
  • Water to adjust the consistency

Instructions

  • Take dal in a cooker and wash it well with water.
  • Add water, garlic paste, ginger paste, green chilies, raw tomato, ambat chukka, palak and mix well.
  • You can use red ripened tomato in place of raw tomato.
  • You can use veggies of your choice like green vange.
  • Close the lid and cook on medium until 3-4 whistles.
  • Beat the dal well with a whisk or ravi.
  • Heat up oil in a pan.
  • Add cumin seeds and let it splutter.
  • Add curry leaves, hing, green chili, raw peanuts, dry coconut slices and fry everything for about a minute.
  • When peanuts and dry coconut is roasted a little add turmeric powder, kala masala and mix well.
  • You can add any other kala masala in place of khandeshi kala masala.
  • Add cooked dal, salt, water and mix well.
  • Dal gandori thickens up as time passes. So add water accordingly.
  • Simmer on medium heat until peanuts and coconut is cooked nice and soft for about 7-8 minutes.
  • Dal gandori is all ready.
  • It goes well with bhakari, rice or as it is as soup.
