Ingredients

  • 1 tsp Butter
  • 3 medium size chopped Onions
  • 2 chopped Tomatoes
  • Few Cashew nuts
  • Finely chopped Ginger
  • Finely chopped Garlic
  • Oil
  • Chopped Potato
  • Cauliflower florets
  • Sliced Carrot
  • Chopped Beans
  • Chopped Capsicum
  • Green peas
  • 1 tsp Butter
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • 1 tsp Kitchen king masala
  • 1/2 tsp Cumin powder
  • A pinch of Sugar
  • Salt to taste
  • Water
  • Paneer cubes

Instructions

  • Heat up a pan on medium heat and add butter.
  • You can use oil in place of butter.
  • Add onion, tomato, cashew nuts, ginger, garlic and fry well on medium heat until it changes color a little for about 7-8 minutes. No need to add water.
  • Turn off the gas and let it cool down.
  • Transfer everything into a blender jar and blend into smooth paste.
  • Do not use any water at all while blending.
  • Masala for mix veg is ready.
  • Heat up oil in a pan.
  • Add potato and shallow fry on medium heat until it gets light golden color.
  • When potato gets light golden color add cauliflower, carrot and fry for about 3-4 minutes more.
  • Add beans and fry for another 2-3 minutes.
  • After frying for about 3-4 minutes, cover and cook for another 7-8 minutes.
  • You can boil or deep fry the veggies instead of shallow frying.
  • Add capsicum, green peas and fry for about 2-3 minutes.
  • If you are using fresh peas than add them with flower and carrot.
  • Transfer all the veggies on a tissue paper.
  • You can shallow fry paneer separately and use if you want.
  • In the same pan add butter.
  • Turn heat to low and add red chili powder, coriander powder, litchen king masala, cumin powder.
  • You can use garam masala in place of kitchen king masala.
  • Fry everything for about a minute.
  • Add the blended masala and mix well.
  • Fry everything well for about 6-7 minutes until the masale release oil.
  • Add sugar, salt, water to adjust the consistency and mix well.
  • Add paneer cubes and cook for just 2 minutes.
  • Add fried veggies and mix well.
  • Cook for another 3-4 minutes and not longer.
  • Turn off the gas and mix veg is all ready.
  • It goes well with naan, paratha.
