Ingredients

For Making Kofte:

  • 1 1/2 cup Finely chopped Cabbage
  • 1/2 cup Grated Carrot
  • Finely chopped Coriander leaves
  • 2 tbsp Cornflour
  • 2 tbsp Maida / All purpose flour
  • 1/2 tsp Kitchen king masala
  • 1 tsp Ginger garlic green chili paste
  • 1/2 tsp Coriander powder
  • 1/2 tsp Red chili powder
  • Salt to taste
  • Oil for Frying

For Making Gravy:

  • 1 tsp Oil
  • 2 Big chopped Onions
  • 1/2 cup Sliced Tomato
  • 4~5 Garlic cloves
  • 1/2” Ginger chopped
  • 1 tsp grated dry Coconut
  • 1 tsp White sesame seeds
  • 1 tsp Cashew nuts chopped

For Making Veg Maratha:

  • 4 tbsp Oil
  • 1/2 tsp Cumin seeds
  • 7~8 Curry leaves
  • 2 Dried red chillies
  • 1 tbsp Kitchen king masala
  • 1/2 tbsp Coriander powder
  • 2 tsp Red chili powder
  • 1 tbsp Khawa / Mawa
  • Salt to taste
  • Water

Instructions

For Making Gravy:

  • Heat up oil in a pan.
  • Add onion, ginger, and garlic.
  • Mix well and fry until onion turns light golden.
  • Add tomato, dried coconut, sesame seeds, and cashew nuts.
  • Mix well and fry for about 4-5 minutes until tomato cooks soft and mashes with onion.
  • Turn off the gas and let the masala cool down a little.
  • Transfer it into a blender jar and blend into a fine paste.
  • Try to use minimum water or do not use any water while blending.
  • Masala is already.

For Making Kofte:

  • In a bowl take cabbage.
  • Add carrot, coriander leaves, red chili powder, kitchen king masala, coriander powder, garlic ginger-green chili paste and mix well.
  • Add cornflour, maida, salt and mix well again.
  • Add very little water and make a thick dough. About a tablespoon of water is enough.
  • The dough should not be thin at all. Make the thick dough.
  • Make small balls from it and flatten it at the center.
  • Heat up oil in a pan.
  • Drop kofte in oil and fry until these are dark brown from both sides.
  • You can shallow fry the kofte if you want.
  • Take kofte out into a dish.

For Making Veg Maratha:

  • Heat up oil in a pan.
  • Add cumin seeds, curry leaves, dried red chillies, and blended masala.
  • Mix well and fry on medium heat for about 4-5 minutes.
  • Add kitchen king masala, coriander powder, red chili powder, khoya, and salt.
  • Mix well and fry on medium heat until it releases oil.
  • Add water enough to make gravy.
  • Mix well and cook the gravy on medium heat for about 4-5 minutes.
  • Turn off the gas and veg Maratha is ready.
  • For serving, in a bowl take the kofte and add gravy on it.
  • You also can add gravy first in the bowl and place kofte in it.
  • Veg Maratha goes well with naan, paratha, roti or jeera rice.

Notes

  • We have added tomato in the masala and the moisture in that is enough for blending the masala. Do try to add minimum water or do not add any water while blending masala.
  • Try to use finely chopped cabbage. If you use grated cabbage, it will release more moisture.
  • The quantity of cornflour and maida will depend on the moisture content of cabbage and carrot.
  • You can use butter instead of oil for making tadka.
