A delightful combination of all different vegetables. Its a good way to finish all your leftover vegetables from refrigerator. Its a very tasty and delicious sabzi which goes perfect with paratha, phulka or rice!

Ingredients

  • 2 Tomatoes
  • 1/4 cup Cauliflower Florets
  • 1/4 cup thick Carrot Slices
  • 1/4 cup French Beans
  • 1/4 cup Green Peas
  • 1/4 cup Red Pepper
  • 1/4 cup shredded Cabbage
  • 1/4 cup Paneer
  • 2 tbsp Oil
  • 1 tbsp Ginger Garlic paste
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1 tsp red Chilli powder
  • 1/2 tsp Garam Masala

Instructions

  • Cut Tomatoes in quarters and put that in to blender to make it in to puree.
  • Put tomato puree in sauce pan, bring it to boil and simmer for 20 mts.
  • After all the moisture from tomatoes have evaporated, add brown sugar to that and mix well.
  • Now take cauliflower and carrots in a microwave safe dish, add splash of water, cover and microwave for about a minute.
  • Now heat up 2 tbsp oil, add ginger garlic paste and cook for a minute.
  • Then add cooked carrots and cauliflower and cook for 2 minutes.
  • Then add green beans, red pepper, mix and cook for 2 minutes.
  • Add paneer, green peas, mix and cook for 2 minutes.
  • Add Tomato paste, red chilli powder, garam masala, coriander powder, cumin powder, add a splash of water, mix well.
  • Add shredded cabbage, mix very well.
  • And cook everything together for 5 to 8 minutes.
  • Garnish with coriander leaves!
