Ingredients

  • 1 cup Fine Rava / Sooji
  • 1 cup fresh grated Coconut
  • 2+1 tbsp Ghee
  • 1 1/4 cup Sugar
  • 1/4 cup water
  • 1/4 tsp Cardamom powder
  • Raisins for Garnish

Instructions

  • Take the fresh coconut and grate it using fine holes of the grater. Be sure to grate only the white side of the coconut and not its skin or brown part.
  • Now take fine sooji into the pan, add tbsp of ghee, mix, start heat on medium-high heat, and dry roast for 6 to 7 minutes.
  • After rawa is roasted take that out on to separate dish.
  • Now in the same pan add grated coconut with a tbsp of ghee, mix and dry roast over medium heat for 3 to 4 minutes.
  • Now take out the coconut and put that into roasted sooji.
  • Now mix roasted sooji and coconut together.
  • Now take sugar into the pan, add water to that, bring that to boil over high heat.
  • After it comes to a boil, lower the heat down and cook the syrup for 4 to 5 minutes or until it gets a little thick or close to single thread consistency.
  • After the syrup is done, turn the heat off.
  • Add the roasted rawa coconut mixture into syrup and mix well.
  • Add cardamom powder, mix, cover and allow it to rest for an hour or until all the syrup gets soaked in a sooji.
  • Give the mixture stir in between.
  • After the mixture becomes thick, grease your hand very well with ghee and take a big tbsp of mixture and roll that into lemon sized ladoos.
  • Top up ladoo with raisin or your favorite topping.
  • Store in an airtight container.

Notes

  • Roast rava and coconut very lightly. You don't need to make it brown otherwise the laddos would not get bright white color.
  • Add the nut as per your taste.
  • The ladoos stays good for up to a week.
  • In place of fresh coconut, you could also use frozen coconut.
