Ingredients

Kairichi Chutney

  • 2 raw Mangoes
  • 1 Onion
  • 2 Garlic cloves
  • Salt to taste
  • Jaggery
  • Red chili powder
  • Roasted Peanut powder
  • 2 tsp Oil
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Cumin seeds
  • A pinch of Hing
  • Curry leaves

Kakadichi koshibir

  • Cucumber
  • Green chili paste
  • 1/2 cup Curd
  • Rock salt
  • Finely chopped Coriander leaves
  • 1 tsp Sugar
  • Roasted Peanut powder

Solkadhi

  • Coconut milk
  • 1/4 cup Koakm syrup (Agal)
  • 1/4 tsp Green chili paste
  • 1/4 tsp Garlic paste
  • Finely chopped Coriander leaves
  • Salt to taste

Curd rice

  • 1 cup Curd
  • 1/4 tsp Green chili paste
  • Rock salt to taste
  • 1/2 tsp Sugar
  • Ginger juice
  • Finely chopped Coriander leaves
  • Cooked Rice
  • 2 tsp Oil
  • 1/4 tsp Mustard seeds
  • A pinch of Hing
  • Curry leaves
  • Dry Red chilies
  • Few Cashew nuts

Nachani Dosa

  • 1 cup Nachani flour
  • 1 tsp Rice flour
  • 1 tsp fine Rava
  • Salt to taste
  • 1 1/2 cup Water
  • Lemon juice
  • Oil

Healthy summer special thali

Instructions

For Kairichi Chutney

Step 1: Wash raw mango really good and dry it with a cotton cloth.

Step 2: Peel and chop raw mango.

Step 3: Chop onion into big chunks.

Step 4: Transfer raw mango, onion into a bender jar and add garlic, salt, jaggery, red chili powder.

Step 5: Blend everything into paste.

Step 6: Add roasted peanut powder and blend again.

Step 7: Transfer the chutney into a bowl.

Step 8: Heat up oil in a tadka pan and add mustard seeds, cumin seeds, hing, curry leaves.

Step 9: Add this tadka on chutney and mix well. Kairichi chutney is ready.

For Kakadichi koshibir

Step 10: Peel the cucumber and grate it into long shreds.

Step 11: Take curd in a bowl and add green chili paste, rock salt, coriander leaves, sugar, roasted peanut powder.

Step 12: Mix everything well together and add grated cucumber.

Step 13: Mix well and koshimbir is ready.

For Solkadhi

Step 14: Take coconut milk in a bowl and add kokam syrup (agal).

Step 15: Mix well and add green chili paste, garlic paste, coriander leaves.

Step 16: Mix everything well together and solkadhi is ready.

For Curd rice

Step 17: Take curd in a bowl and add green chili paste, rock salt, sugar, ginger juice, coriander leaves.

Step 18: Mix everything well together.

Step 19: Add cooked rice and mix well.

Step 20: Heat up oil in a tadka pan.

Step 21: Add mustard seeds and let them splutter.

Step 22: Add cumin seeds, hing, curry leaves, dry red chilies, cashew nuts and fry until cashew nuts get light golden color.

Step 23: Add this tadka on rice and mix well. Curd rice is all ready.

ForNachani Dosa

Step 24: Take nachani flour in a bowl and add rice flour, rava, salt.

Step 25: Mix well and add water to make batter. The batter should have pouring consistency.

Step 26: Add lemon juice and mix well.

Step 27: Heat up a pan on medium heat and spread oil.

Step 28: Wipe oil with tissue paper.

Step 29: Add ladleful batter at the center of the pan and spread it evenly.

Step 30: Cover and cook for about 1-2 minutes.

Step 31: Remove the lid and flip the dosa over.

Step 32: Cook well from other side too.

Step 33: When dosa is cooked well from both sides take it off into a dish. Nachani dosa is all ready.

Quick summer special thali

Notes

  • You can use ginger-green chili paste in place of green chili paste in curd rice.
  • You can use grated ginger in place of ginger juice in curd rice.
  • You can use curd or buttermilk in place of lemon juice in nachani dosa
