Ingredients

For Masala Chutney:

  • 1 cup hot Water
  •  Dry red chilies
  • 4~5 Garlic cloves
  • 1/2 tsp roasted Cumin powder
  • 1 tsp Coriander powder
  • 1/4 tsp Black salt
  • Salt to taste

For Patties:

  • 1 tbsp Oil
  • 1/4 tsp Hing
  • 1 tsp Garlic-Green chili paste (7~8 Garlic cloves & 2~3 Green chilies)
  • 1/4 tsp Turmeric powder
  • 1 big Potato
  • Salt to taste
  • 1/2 tsp Lemon juice
  • Finely chopped Coriander leaves

For Patties Masala Pav:

  • Oil
  • Ladi pav
  • Sliced Tomato
  • Sliced Onion

Instructions

For Masala Chutney:

  • In a bowl take hot water.
  • Add dry red chilies and soak them in hot water for about 30 minutes.
  • Transfer the soaked chilies into a blender jar along with water in it.
  • Add garlic cloves, roasted cumin powder, coriander powder, black salt, salt and blend it into fine puree.
  • Masala chutney is already.

For Patties:

  • Heat up oil in a pan.
  • Add hing, garlic-green chili paste and mix well.
  • Fry it for about 30 seconds.
  • Turn off the gas and add turmeric powder Mix well.
  • Add boiled, peeled and mashed potato and mix well.
  • Make sure to add potato after you turn off the heat. Or potato will lose moisture on heating.
  • You don’t have to cook these boiled potatoes more.
  • Add salt, lemon juice, coriander leaves and mix well.
  • Let the mixture cool down completely.

For Patties Masala Pav:

  • Take some potato mixture and make patties.
  • Heat up a pan on low to medium heat.
  • Spread some oil or butter on it.
  • Transfer the patties on the pan and shallow fry until these get deep golden color form both sides.
  • Once the patties get nice golden color from lower side, add some oil on the upper surface and flip them over.
  • Move the patties aside and let them cook.
  • Add 1 tsp oil on a side of the pan.
  • Add 1 tbsp masala chutney in that oil.
  • Mix well and cook for about a minute or until the raw flavour of garlic and red chili goes away.
  • Add coriander leaves and mix well.
  • Take pav and coat it well with masala chutney.
  • Cook the bread for just about a minute or so.
  • Coat it well from both sides.
  • Take the masala pav into a plate.
  • Put the patties on it.
  • Put a slice tomato, a slice of onion and close it up.
  • Patties masala pav is already.
