Ingredients

For Idly Premix

  • 3 cups Rice
  • 1 cup Urad dal
  • 1 cup Poha / Flattened rice
  • 1 tsp Fenugreek seeds

For Making Idly

  • 2 cups Idly premix
  • 1/2 cup Curd
  • 2 cup Water
  • Salt to taste
  • 1 tsp Eno fruit salt
  • 1~2 tsp Water

Idlies using Idly premix

Instructions

For Idly Premix

Step 1: In a pan take rice, urad dal, pohe and roast everything together on medium heat for about 6-7 minutes.

Step 2: Turn off the gas and add fenugreek seeds.

Step 3: Mix well and let everything cool down a little.

Step 4: Transfer the mixture into a blender jar and blend into coarse powder. It should be like fine rava. Mix everything well together and turn off the gas.

Step 5: Transfer the mixture into a bowl and premix is ready.

For Making Idlies

Step 1: For making idly take premix in a bowl and add curd, water, salt.

Step 2: Mix everything well together and rest the batter for about 30 minutes.

Step 3: Add Eno fruit salt, water and mix in quickly.

Step 4: Grease the idly mold well with oil and pour the batter in it.

Step 5: Steam the idlies on medium heat for about 15-20 minutes.

Step 6: Let the idlies be in the cooker for another 10 minutes.

Step 7: Take the idly stand out and wait for about 2-3 minutes.

Step 8: Take the idlies out with the help of knife or spoon.

Step 9: Serve idlies with sambar and chutney.

  • When premix cools down completely you can store it in an airtight container for about 3-4 months.
  • If you don’t want to make instant idly then you can ferment the batter for about 15-16 hours and then make idlies.
