Ingredients

  • 3 medium size Alphanso Mangos
  • 250 gm grated Khava / Mava
  • 1 1/2 cups Powdered sugar
  • 1 tsp Ghee
  • Dry fruit (Optional)

Instructions

  • Take mangoes and peel them. Cut into pieces and blend it into pulp.
  • Heat up a pan on medium heat and transfer the pulp into it.
  • Cook the pulp for 7-8 minutes. In the beginning it will become a bit runny and will thicken up as time goes.
  • When pulp will begin to come together, add khava and sugar. Mix well.
  • The mixture will become runny as sugar and khava release moisture when heated.
  • Continue to cook until the mixture thickens up and comes together.
  • You can either continue to cook on gas or transfer the mixture into a microwave safe bowl and microwave for about 7-8 minutes.
  • Microwave for 4 minutes, take out and stir well.
  • Again transfer the bowl into microwave and cook for another 4 minutes.
  • Grease a dish with a little ghee.
  • Take out the barfi mixture into the dish and spread it with a spoon.
  • Spread in square shape and keep the thickness of about 1”.
  • Spread dry fruits on it. You can skip dry fruits if you don’t want.
  • Let the mixture cool down.
  • Cut into pieces with the help of knife. Amba barfi is already.
  • This remains good in freeze for about 4-5 days.
