Ingredients

  • 1 1/2 cup Penne pasta
  • 1 cup Milk
  • 1/4 cup Fresh cream
  • 1 tbsp Olive oil
  • Sliced Yellow, Red and Green pepper
  • 2 tbsp Butter
  • 2 tbsp Maida / All purpose flour
  • 1 tbsp Minced Garlic
  • 2 tsp Mixed herbs
  • 1 tsp Red chili flakes
  • Crushed Black pepper
  • Salt to taste
  • 1/2 cup Cheese

Instructions

  • Heat up some water in a pan for cooking pasta.
  • Heat up olive oil in a pan.
  • Add red, yellow, green pepper, garlic.
  • You can use mushrooms or any veggies of your choice instead of peppers.
  • Mix well and fry the veggies for about 3-4 minutes.
  • Add salt in the water.
  • When water begins to boil, add pasta.
  • Cook the pasta as per the packet instructions or until the pasta is about 90% cooked.
  • Add mixed herbs, crushed pepper chili flakes and salt in the veggies.
  • You can completely skip the chili flakes.
  • Mix well and cook for just about a minute. Keep the pan aside.
  • Heat up another pan in which you are going to make pasta and add butter.
  • When butter melts add minced garlic and crushed black pepper.
  • Fry garlic for just about a minute.
  • Add maida and cook for about 2-3 minutes.
  • Add milk and mix it quickly to avoid lump formation of maida.
  • Cook for about 5-6 minutes. Make sure that raw smell of maida is removed.
  • Add fresh cream and mix well. Sauce is ready.
  • Transfer the cooked pasta from boiled water directly into the sauce. This gives pasta nice juicy texture.
  • Add veggies and mix well.
  • Add cheese and mix well.
  • Cook the pasta just for 2-3 minutes.
  • Turn off the gas and serve the pasta.
  • Add some chili flakes for garnishing.

Notes

  • You can use garlic powder instead of fresh garlic.
  • You can replace mixed herbs with Italian herbs or Italian seasoning.
  • If you precook the pasta and keep it aside, it gets a little dry. To avoid that cook pasta s parallel while making sauce. Add it directly from boiled water into the sauce to get nice juicy texture.
