Ingredients

  • 1 cup chopped Pumpkin
  • 2 tsp shredded fresh Coconut
  • 2 tsp Roasted peanut powder
  • 4 tsp Curd / Yogurt
  • 2~3 tsp finely chopped Coriander leaves
  • Salt to taste
  • Sugar to taste
  • 1 tsp Ghee
  • 1/2 tsp Cumin seeds
  • 1 finely chopped

Instructions

  • Peel the pumpkin and chop it into pieces.
  • Transfer these pieces into a pan & add about a tsp water.
  • Cook on medium heat for about 5-6 minutes.
  • When pumpkin is cooked, mash it well with potato masher & let it cool down a little.
  • Take curd into a bowl.
  • Add salt, sugar and mix it really good.
  • Add the mashed pumpkin, shredded fresh coconut, peanut powder, coriander leaves & mix well.
  • Heat up ghee into a tadka pan.
  • Add cumin seeds and let them splutter.
  • Add green chili and mix well.
  • Add this tadka on bharit and lal bhopalyache bharit is already.
  • This is a good side dish & you can have it on fasting days too.

Notes

  • You can roast pumpkin in oven too. Transfer a pumpkin piece into oven & microwave on 350 Deg F or 180 Deg C for about 20-25 minutes.
