Ingredients

For Carrot Raita:

  • 1/2 cup Curd / Yogurt
  • 1/4 tsp Black salt
  • 1/4 tsp Chat masala
  • Powdered sugar
  • Finely chopped Green chili
  • Shredded Carrot
  • Finely chopped Coriander leaves
  • Oil
  • 1/2 tsp Mustard seed
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • Curry leaves
  • Green chili

For Onion & Tomato Raita:

  • 1/2 cup Curd / Yogurt
  • 1/2 tsp red chili powder
  • Powdered sugar
  • Salt to taste
  • Green chili
  • Finely chopped Onion
  • Finely chopped Cucumber
  • Diced Tomato
  • Finely chopped Coriander leaves
  • 1 tsp Roasted peanut powder
  • Oil
  • Mustard seeds
  • Cumin seeds
  • A pinch of Hing

For Bundi Raita:

  • 1/2 cup Yogurt / Curd
  • 1/4 cup Water
  • 1 tsp Roasted cumin powder
  • 1/4 tsp Chat masala
  • 1/4 tsp Black salt
  • 1/2 tsp Red chili powder
  • Finely chopped Coriander leaves
  • 1/2 cup Bundi

For Mint Raita:

  • 1~2 Garlic cloves
  • A little Ginger
  • Green chili
  • Coriander leaves
  • Mint leaves
  • 1 cup Curd
  • Salt to taste

Instructions

For Carrot Raita:

  • Take curd in a bowl.
  • Add balck salt, chat masala, powdered sugar, green chili and mix well.
  • Beat the curd well so as to remove all the lumps.
  • Add shredded carrot and coriander leaves. Mix well.
  • Heat up oil.
  • Add mustard seeds, cumin seeds, hing, curry leaves, green chili and add this tadka on raita.
  • Mix well and carrot raita is already.

For Onion & Tomato Raita:

  • In a bowl take curd.
  • Add red chili powder, powdered sugar, salt, very little green chili and mix well.
  • Add onion, cucumber, tomato, coriander leaves and mix well.
  • You can add only cucumber and tomato if you don’t want to add onion.
  • Add roasted peanut powder and mix well.
  • You can serve this raita as it is.
  • Heat up oil in a pan.
  • Add mustard seeds, cumin seeds, hing and add the tadka in raita.
  • Mix well and onion tomato raita is already.

For Bundi Raita:

  • Take curd into a bowl and add water.
  • Add roasted cumin powder, chat masala, black salt, red chili powder and mix well.
  • No lumps of curd should be left behind.
  • Add coriander leaves and bundi. Mix well.
  • You can keep the consistency of curd a little thick if you want.
  • Soak the bundi in water for 5 minutes, drain all the water and add it in thick curd.
  • Cool it in freeze and serve.

For Mint Raita:

  • In a blender jar add garlic, ginger, green chili, coriander leaves, mint leaves and blend them fine in mixer.
  • Add curd, salt and blend again in mixer.
  • Take the raita out into a bowl.
  • You can serve this raita with any biryani.
