Ingredients

  • 250 gm Khoya / Mawa
  • 1 cup Maida
  • 1 cup Milk
  • 1 cup Sugar
  • 1/2 cup Water
  • Cardamom powder
  • Oil for frying

Instructions

Step 1: Grate the khoya finely and keep it aside.

Step 2: Strain maida in a bowl and add milk.

Step 3: Mix well taking care no lumps of maida should be formed.

Step 4: Add grated khoya and mix everything well together to make smooth batter.

Step 5: For making sugar syrup take sugar and add water, cardamom powder in a pan.

Step 6: Mix well and let the sugar melt on high heat.

Step 7: When sugar melts and the mixture boils well reduce the heat to low and simmer for another 4-5 minutes.

Step 8: When the syrup turns a little sticky, turn off the gas. The syrup should have consistency like gulabjam syrup.

Step 9: Heat up oil on low heat and drop a ladleful batter into the oil. The oil should not be too hot.

Step 10: Fry malpua well until it gets nice golden color from both sides.

Step 11: When lower side gets nice, even golden color, flip it over and fry well from other side too.

Step 12: When other side too gets nice golden color take the malpua out, drain excess oil and transfer into a dish.

Step 13: Drop hot malpua into hot syrup and coat syrup well from both sides.

Step 14: Transfer the malpua into a dish and malpua is ready.

Notes

  • You can add more 2-3 tsp milk if you feel the mix mixture is too thick.
  • Instead of cardamom powder, add pods so that the color of syrup won’t change.
  • You can make around 20-25 medium size malpua from the given proportion.
  • You can store malpua for about 2-3 days.
