Ingredients
Green Chutney
- 1/4 Onion
- 1 cup Coriander Leaves
- 1 Green Chilli
- 1/4 tsp Roasted Cumin powder
- 1/4 tsp Chat Masala
- 1 tsp Lemon juice
- Salt
- Water
Tamarind Chutney
- 3 tbsp Tamarind
- 1 tbsp Jaggery
- 1/4 tsp Chilli powder
- 1/4 tsp Chat Masala
- Salt to taste
 Ragda
- 1 cup White Peas
- 1 1/2 cup Water
- 1/2 tsp Turmeric powder
- Salt to Taste
Pattice
- 2 Potatoes Boiled and mashed
- 1 tsp Red Chilli powder
- 1/2 tsp Garam Masala
- 1/2 tsp Roasted Cumin powder
- 1/2 tsp Coriander powder
- 1/2 tsp Chat Masala
- 1/2 cup Coriander leaves
- Salt to taste
Instructions
- Mix all ingredients for green chutney in a mixie pot and blend to make it into the puree.
- Mix tamarind and jaggery with water and microwave for 1 minute. Keep aside for 2 hours.
- After 2 hours, mash tamarind well and strain out tamarind pulp.
- In tamarind pulp mix in red chili, chat masala, salt and mix in well.
- For Ragda soak peas in water overnight.
- Put soaked peas in a pressure cooker, add turmeric powder, water, and pressure cook until peas turn soft.
- Once peas are cooked add salt to taste, mash them a bit and transfer into another pan.
- For pattice take mashed potatoes into a bowl. To that add all dry spices mentioned in the ingredients list.
- Mix well and divide it into equal size patties.
- Grease skillet with oil and shallow fry potato patties until they get nice browning from both the sides.
- Take one of the pattie in the serving dish, pour ragda on the top of it.
- Add tamarind chutney, green chutney, onion, chat masala, sev and coriander leaves.
- Serve to steam hot!
Notes
- Each pressure cooker is different so use your own judgment while boiling peas. Basically, we want nicely cooked peas.
- Adjust the spices to your taste.
