Ingredients

  • 2 cups grated Cabbage
  • Finely chopped Spring onion
  • 1 cup Jawar flour
  • 1 cup Besan
  • 1/4 cup Rice flour
  • 1/2 tsp Turmeric powder
  • 1 tsp Cumin seeds
  • 1/2 tsp Chat masala (Optional)
  • Green chilli-Garlic paste
  • Salt to taste
  • Red chili powder
  • Oil for frying

Instructions

  • Take cabbage into a bowl.
  • Add spring onion, jawar flour, besan, rice flour, turmeric powder, cumin seeds, chat masala, green chilli-garlic paste, salt, red chili powder and mix everything well together.
  • You can use besan and rice flour or bhajani or chakali bhajani too for making these vadya.
  • Dough is ready. No need to add water as grated cabbage releases lot of moisture and that is sufficient for making dough.
  • Take tray lined up with wax paper.
  • Transfer the mixture into the tray and spread evenly.
  • You can make rolls of the dough like kothimbir vadi.
  • Heat up water in a kadhai or big pot.
  • Place a stand or empty tin at the base and tray of vadi on it.
  • Steam the vadi on medium heat for about 15-20 minutes.
  • Insert a tooth pick or knife at the center of the steamed vadi.
  • If it comes out clean, it means that vadi is well steamed.
  • When the mixture cools down a little, loosen the edges with knife and flip the tray over into a plate.
  • Remove the wax paper and cut it into pieces in any shape and size you want.
  • You can spread sesame seeds before steaming the vadi.
  • Just take care while frying so that the sesame seeds won’t pop out.
  • Heat up oil for frying.
  • Drop vadya into hot oil and fry well from both sides.
  • You can shallow fry vadya too.
  • When vadya get nice golden color from both sides take them out into a dish.
  • Kobichay vadya are all ready.
