Ingredients

  • 375 gm Surmai
  • 1 tsp Ginger-Garlic paste
  • 1/2 tsp Turmeric powder
  • Lemon juice
  • Salt to taste
  • 1 tbsp Red chili powder
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1 tbsp Garam masala
  • Finely chopped Coriander leaves
  • 1 cup Coarse Rava / Sooji
  • 1 tbsp Rice flour
  • Oil

Instructions

  • Cut surmai into about 1/2” thick slices.
  • Wash them really good, drain all the water and tap them with a dry cloth or paper so that the moisture content in them will be minimum.
  • For marinating add ginger-garlic paste, turmeric powder, salt, lemon juice in the fish and rub everything well from all sides of it.
  • Keep it aside for marinating for about 15-20 minutes.
  • Take a broad bowl.
  • Add Rava, rice flour, 1/2 tsp red chili powder, and salt to taste.
  • Mix well and outer coating for fish is ready.
  • For making masala in a bowl take red chili powder, coriander powder, cumin powder, garam masala, salt to taste, and mix well.
  • Add a little water to make a thick paste of it.
  • Add coriander leaves and mix well. You can skip coriander leaves if you don’t like it.
  • The consistency of the masala should be medium and spreadable.
  • It should neither be too thick or too thin.
  • Take the marinated fish and spread about a tbsp masala on it from all sides.
  • Dip the masala coated fish in rava mixture and smear rava on it from all sides.
  • You can store such masala and rava coated fish in a steel daba or zip lock bag in the freezer for about 3-4 months.
  • Heat up oil on high heat.
  • When the oil is really hot reduce the heat to medium.
  • Drop the fish in hot oil.
  • The oil should be very hot while dropping fish in it.
  • Fry on medium heat from one side and flip the fish over.
  • Fry form another side too on medium heat for another 3-4 minutes.
  • Take the fish out into a dish and surmai Rava fry is already.
  • You can have surmai fish fry as it is.
  • It goes well with rice bhakari oe with rice as a side dish too.

Notes

  • Use coarse rava only and it should be raw.
  • You can also use store-bought ready fish masala too.
  • Add a layer of fish in a big steel or plastic daba, put a wax paper or plain paper on it, and add another layer of fish. Whenever required, take the daba out of the freezer 30 minutes before frying and fry them. These remain good for about 3-4 months.
