Ingredients

For Coating of Chicken:

  • 1 cup Maida
  • Salt to taste
  • Water

For Chicken Stuffing:

  • 250 gm Boneless chicken
  • 1 cup finely chopped Onion
  • 1 tsp Red chili powder
  • 1 tsp Ginger-Garlic paste
  • 1 tsp Coriander powder
  • 1 tsp Lemon juice
  • 1 tsp Garam masala
  • 1/4 tsp Turmeric powder
  • 1 tsp Kasoori methi
  • Salt to taste
  • 2 tsp Oil

For Making Egg Mixture:

  • 2 Eggs
  • 2 tbsp finely chopped Coriander leaves
  • 1/4 tsp Black pepper powder
  • 1 chopped Green chili
  • Salt to taste

Instructions

For Coating of Chicken:

  • Take maida into a bowl and add salt. Mix well.
  • Add a little water at a time and knead the thick dough. The dough should not be soft.
  • Spread a little oil on the dough and cover it.
  • Rest the dough for about 30-45 minutes.

For Chicken Stuffing:

  • Wash and clean the chicken really well.
  • Dry it and cut the chicken into small pieces.
  • To marinate chicken take it into a bowl.
  • Add red chili powder, ginger-garlic paste, coriander powder, garam masala, turmeric powder, salt, lemon juice, and mix well.
  • Cover and let the chicken marinate for about 30 minutes.
  • Heat up oil in a pan.
  • Add onion and mix well.
  • Fry the onion on medium heat for about 2-3 minutes.
  • Add marinated chicken and mix well.
  • Cover and cook on medium heat for about 3-4 minutes.
  • If you feel the chicken is getting dry then add a little water and mix well.
  • Cover and cook on medium heat for 3-4 minutes again.
  • At the intervals take the lid off and mix the chicken well so that it won’t stick to the pan. C
  • Cook the chicken stirring at the intervals for about 10 minutes.
  • When chicken gets nicely cooked add kasoori methi, coriander leaves and mix well.
  • Chicken stuffing is already.

For Making Egg Mixture:

  • Break eggs into a bowl and beat them really well.
  • Add green chili, black pepper powder, salt, coriander leaves and mix well.
  • The egg mixture is already.

For Making Baida Roti:

  • Take the dough and knead it once more to make it soft.
  • Divide the dough into 2 portions.
  • Take 1 portion and fold the lower side to make a smooth ball.
  • Sprinkle dry flour and roll it into a roti.
  • Roll as thin roti as possible.
  • Grease the pan well with oil.
  • Turn on the gas on the lowest possible setting and put the pan on it.
  • Transfer the roti to the pan.
  • Add chicken stuffing at the center of the roti and spread it a little.
  • Add the egg mixture to the chicken stuffing.
  • Lift the roti from one side and fold it.
  • Repeat the procedure for all 4 sides to make a pocket.
  • If the pan is too hot then you can’t fold the roti easily. So keep the gas on the lowest minimum heat.
  • Add some oil from the sides of the pocket and cook on low to medium heat really good for about 3-4 minutes.
  • Flip over and cook on low to medium heat from another side as well for about 3-4 minutes.
  • Roast the edges of the pocket by holding the roti with 2 spoons from all sides.
  • Chicken baida roti is already.
  • You can make 2 baida roti from 1 cup maida.
