Valval is a Konkani mixed vegetable recipe. We are not using onion, garlic, tomato, ginger in this recipe. It is “Satvik” food.  This is a real quick recipe. It looks nice and tastes fantastic. Ingredients

  • 1 Peeled and chopped Potato
  • Chopped Pumpkin
  • Chopped French beans
  • Chopped Carrot
  • 3~4 chopped Green chilies
  • Water
  • Chopped Raw banana
  • Frozen matar
  • Few Cashew nuts
  • Salt to taste
  • Coconut milk
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • Dry Red chilies
  • Curry leaves

Instructions

Step 1: Heat up a pan on medium heat and add potato, pumpkin, French beans, carrot, green chilies, water.

Step 2: Cover and cook the veggies for about 5-7 minutes.

Step 3: After about 5 minutes of cooking add raw banana, frozen matar, cashew nuts, salt and mix well.

Step 4: Add a little more water if needed.

Step 5: Cover and cook again for another 6-8 minutes.

Step 6: Remove the lid and check if the veggies are cooked. Take care not to overcook the veggies.

Step 7: Add coconut milk and mix well.

Step 8: Cook everything together for another 5-7 minutes.

Step 9: For tadka heat up oil in a pan and add mustard seeds.

Step 10: When mustard seeds pop up add cumin seeds and let it splutter.

Step 11: Add hing, dry red chilies, curry leaves and mix well.

Step 12: Add this tadka on valval and mix well.

Step 13: Turn off the gas and valval is all ready.

Notes

  • You can use ash gourd, elephant foot yam too in this recipe.
  • You can cook the veggies in cooker until 1 whistle.
  • You can use ghee or coconut oil in place of oil for tadka.
  • You can have valval as it is or with ghavane, poli or rice.
  • It goes well with shievale or rice noodles.

This is a a very easy and simple recipe. You can have it as it is. It goes well with poli or rice too. You can serve valval with “shirvalya” or rice noodles. This konkan special recipe tastes nice and is a real quick recipe.
