Healthy Upwas Sandwich

During fast if you feel like having something different then this is the recipe for you. Crispy and healthy upwas sandwich! Surprised, aren’t you? But yes, you can have sandwich during fast too. You just can’t guess that these are fasting sandwich. Though stuffing looks like potato stuffing, it is not potato. These turn out nice and crispy. It needs very few ingredients and is a real quick recipe. This is a very healthy and tasty recipe. You can try this recipe at home

For making crispy upwas sandwich healthy we are making stuffing of pumpkin and not potato. Of course if you want you can make potato stuffing too. We already have seen lot many upwas recipes like sabudana khichadi, sabudan vada, upwas dhokla, upwas idly, amboli, cutlets, kachori etc. Here is a testy and healthy addition sandwich.

Ingredients

For Cover

  • 1/2 cup Varai / Vrat ke chaval
  • 1/4 cup Sabudana
  • 1/4 cup Curd (Optional)
  • Salt to taste
  • About 1/4 cup Water

For Stuffing

  • 1 tsp Ghee
  • 1 tsp Cumin seeds
  • Ginger-Green chili paste
  • Chopped Pumpkin
  • Salt to taste
  • Roasted Peanut powder
  • Finely chopped Coriander leaves (Optional)

For Making Sandwich

  • 1 tsp Eno fruit salt
  • 1 tsp Water
  • Ghee / Butter / Oil

Instructions

For Cover

Step 1: Take varai in a blender jar and add sabudana.

Step 2: Blend it together into fine powder and transfer into a bowl.

Step 3: Add curd, salt, water and mix well to make thick paste.

Step 4: Cover and rest the batter for about 30 minutes.

For Stuffing

Step 1: Heat up ghee in a pan.

Step 2: Add cumin seeds and let them splutter.

Step 3: Add ginger-green chili paste and fry for about a minute.

Step 4: Add pumpkin, salt and mix well.

Step 5: Open the lid and mix well at the regular intervals.

Step 6: Do not overcook the pumpkin as it will be cooked again while making sandwich.

Step 7: Add roasted peanut powder and mix well.

Step 8: Add coriander leaves and mix well.

Step 9: Let the stuffing cool down completely.

For Making Sandwich

Step 1: Take the batter and mix well once.

Step 2: Add Eno fruit salt, water and mix in quickly.

Step 3: Grease one side of the gas grill well with ghee.

Step 4: Spread the sandwich batter at the base and the stuffing on it.

Step 5: Again add a layer of the batter on the stuffing.

Step 6: The stuffing should be covered with batter but at the same time the grill should not over flow.

Step 7: Grease the other side of the gas grill well with ghee and close it up.

Step 8: Turn on the gas and place the gas grill on it.

Step 9: Roast well until lower side is toasted well.

Step 10: Flip the gas grill over and roast the other side too.

Step 11: When the sandwich is grilled well from both sides, turn off the gas and open the grill.

Step 12: Take the sandwich out into a dish and upwas sandwich is all ready.

Notes

  • Adding curd is optional. You can skip it if you don’t want.
  • You can add lemon juice or buttermilk in place of curd.
  • Adding ginger is optional. You can skip it if you don’t want.
  • You can add grated fresh coconut in the stuffing if you want.
  • Adding coriander leaves is optional. You can skip it if you don’t want.
  • You can use small skillet or electric grill too.
  • You can use butter or oil in place of ghee.
