Akshay Tritiya Special Thali

Akshay tritiya thali is a little different yet delicious. It looks nice and colorful. All the dishes served in the are really tempting and different. We are making something different than puranoli or shrikhand. Generally it is so said that we should start having mangoes on this auspicious day. So we are making aamras too. We already have seen few thali recipes. This is yet another delicious and simple addition to the list. You can try this recipe at home.

Akshay Tritiya is one of the holi and auspicious day in Hindu culture. It is believed that anything that is started on this day remains forever that is “Akshay” and always victorious. It is celebrated all over the country. This is one of the 3 1/2 auspicious days i.e. “Sadeteen Muhurt.”

We start having mangoes in this day. So aamras recipe is also included in this. We are not using onion or garlic. So this can be a good option for offering naivedya to God.

Ingredients

Varan Bhat

  • 1/2 cup Tur dal
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Hing
  • 1 cup Rice
  • 2 cups Water
  • Black Salt to taste

Olya Kajuchi Bhaji

  • 3 tsp Oil
  • 1/2 tsp Cumin seeds
  • 3 Tomatoes pureed
  • 1/2” chopped Ginger
  • Grated fresh Coconut
  • Coriander leaves
  • 2 tsp Malvani masala
  • 1 tbsp Red chili powder
  • 250 gm Ole kaju
  • Hot Water
  • Salt to taste

Dal

  • 2 tsp Oil
  • 1/2 tsp Cumin seeds
  • Cinnamon stick
  • 2~3 Black pepper corns
  • 2~3 Cloves
  • Curry leaves
  • Finely chopped Tomato
  • 1/2 tsp Ginger paste
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • Salt to taste
  • 1 piece of Kokum
  • 1 tsp Gudh
  • Water
  • Finely chopped Coriander leaves

Aamras

  • 2 Mangoes
  • 1 tsp Sugar

Mango Kheer

  • 1/2 liter full cream Milk
  • 1/4 cup Rice
  • 1/4 cup assorted Dry nuts (Almonds, Cashew nuts)
  • 3 tsp Sugar

Moong Dal Koshimbir

  • 1/4 cup Moong dal
  • Grated Carrot
  • Fresh grated Coconut
  • Green chili paste
  • Salt to taste
  • Finely chopped Coriander leaves

Kokum Saar

  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Hing
  • Kadhipatta
  • Chopped Green chili
  • Water
  • Kokum pulp (Aagal)
  • Salt to taste

Urad Dal Vade

  • 1 cup Urad dal
  • Finely chopped Coriander leaves
  • Salt to taste
  • Oil for frying

Chutney

  • Shredded fresh Coconut
  • 2 chopped Green chilies
  • Chopped Ginger
  • Salt to taste
  • 1 tsp Sugar
  • Coriander leaves
  • A little Water

Instructions

Varan Bhat

Step 1: Wash tur dal really good 3-4 times and add turmeric powder, hing, water.

Step 2: Wash rice really good 3-4 times and add water, black salt.

Step 3: Transfer the dal and rice into cooker and close the lid.

Step 4: Cook on medium heat until steam begins to release and the cook on low heat for 15 minutes.

Step 5: Take the dal out and beat it really good.

Olya Kajuchi Bhaji

Step 6: Heat up oil in a pan and add cumin seeds.

Step 7: Add tomato puree and fry for about 5-6 minutes.

Step 8: Blend fresh coconut and coriander leaves in mixer into fine paste and keep it aside.

Step 9: When oil begins to release from puree add blended coconut paste and mix well.

Step 10: Add Malvani masala, red chili powder and fry everything well together for about 4-5 minutes.

Step 11: When the spices begin to release oil add ole kaju and mix well.

Step 12: Add hot water, salt and mix well.

Step 13: Cover and cook on medium heat for about 10 minutes.

Step 14: Open the lid and mix well once. Olya kajuch bhaji is all ready.

Dal

Step 15: Heat up oil in a pan and add cumin seeds.

Step 16: When cumin seeds splutter add cinnamon, black peppercorns, cloves and fry for few seconds.

Step 17: Add curry leaves, tomato and fry for about 4-5 minutes.

Step 18: Add ginger paste, red chili powder, coriander powder and fry for about 2-3 minutes.

Step 19: Add cooked dal, salt, kokum, gudh, water to adjust the consistency and mix well.

Step 20: Bring it to boil and add coriander leaves. Dal is all ready.

Aamras

Step 21: Wash mangoes really good and cut off the stem part.

Step 22: Make 4 slits on the mango and peel the skin.

Step 23: Chop the mango into pieces and transfer them into a blender jar.

Step 24: Add sugar and blend it into puree. Aamras is all ready.

Mango Kheer

Step 25: Heat up milk in a pan. 

Step 26: Wash rice really good and blend it into coarse paste in mixer.

Step 27: When milk begins to boil add rice paste, dry nuts, sugar.

Step 28: Mix well and cook for about 15-20 minutes until rice is cooked well.

Step 29: When rice is cooked well turn off the gas and let the mixture cool down completely.

Step 30: Add aamras and mix well. Mango kheer is all ready.

Moong Dal Koshimbir

Step 31: Wash moong dal really good and soak it in enough water for about 2-3 hours.

Step 32: Add grated carrot, coconut, green chili paste, salt, coriander leaves and mix well. Moong dal koshimbir is all ready.

Kokum saar

Step 33: Heat up oil in a pan and add mustard seeds.

Step 34: When mustard seeds pop up add cumin seeds and let it splutter.

Step 35: Add hing, curry leaves, green chili, water.

Step 36: Add kokum pulp, salt and mix well.

Step 37: Bring it to boil. Kokum saar is all ready.

Urad Dal Vade

Step 38: Wash urad dal really good and soak it in enough water for about 5-6 hours.

Step 39: Drain all the water from soaked dal and blend it into coarse paste in blender.

Step 40: Transfer the paste into a bowl and add coriander leaves, salt.

Step 41: Beat the batter really good.

Step 42: Heat up oil in a pan and drop vade into hot oil.

Step 43: Fry vade really good from both sides and take them out.

Step 44: Urad dal vade are all ready.

Chutney

Step 45: Take fresh coconut in a blender jar and green chili, ginger, salt, sugar, coriander leaves, water.

Step 46: Bland everything together into paste and chutney is all ready.

 

Notes

  • You can use any other masala of your choice in place of Malvani masala for olya kajuchi bhaji.
  • You can use mango pulp in place of aamras for mango kheer.
  • You can soak kokum petals in water and use that in place of kokum pulp for kokum saar.
