Ingredients

  • 1 1/2 Sprouted Moth Beans or Matki
  • 1/4 cup Shredded Carrot
  • 1/4 cup Shredded Cabbage
  • 3 tbsp Chopped Coriander Leaves
  • 1 tbsp of Lemon Juice
  • 1 tsp Red Chili Power
  • 1/2 tsp Chat Masala
  • 1 tbsp Golden Raisin
  • 1/2 tsp Sugar
  • 1/4 tsp Black Pepper
  • 1 tbsp Olive Oil

Instructions

Method to Sprout Beans

  • First rinse beans well and wash 2 to 3 times.
  • Then soak in enough water overnight or for atleast 8 hours.
  • After 8 hours of soaking, drain off all excess water from beans.
  • Transfer beans in to cheesecloth and wrap it very well.
  • Leave it to sprout for 2 to 3 days.
  • Be sure to add coulpe of splashes of water over cheesecloth in between.
  • This will prevent beans from getting dry and will keep it enough moist to sprout.
  • After about 2 days, you will see beans will start to get sprouts.

Salad Preparation

  • Take sprouted beans in to salad bowl.
  • To that add cabbage and carrot.
  • Then add coriander leaves.
  • Add chilli powder, chat masala, salt, sugar, raisins, black pepper.
  • Add olive oil and lemon juice and toss very well.
  • Its ready to serve!

Notes

  • If you don't like moth beans use any beans of your choice.
  • Also jazz up with spices here and there to adjust it to suit to your taste buds.
