Ghuta is a traditional Maharashtrian recipe. It is made in different ways in different parts of Maharashtra. We already have seen khandeshi special ghuta. Ingredients

  • 1/2 cup Urad dal
  • 2 cups Water
  • 4~5 chopped Green chilies
  • 4 tsp shredded dry Coconut
  • 7~8 Garlic cloves
  • A small piece of Ginger chopped
  • Coriander leaves
  • 2 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • 10~12 Curry leaves
  • 1/2 tsp Turmeric powder
  • Salt to taste

Instructions

  • Take urad dal into a wet napkin.
  • Rub it well with napkin to remove the powder coating on the dal.
  • You can use urad dal with or without skin the one that you have.
  • Transfer the dal into the cooker and roast it a little for about 3-4 minutes so that it will become light and get cooked quickly.
  • When dal gets light golden color add water and cook dal on medium heat until 3-4 whistles.
  • For making vatan or masala for ghuta in a blender jar take green chilies, dry coconut, garlic, ginger, coriander leaves and blend them into paste.
  • Use minimum water while blending. Vatan or masala is all ready.
  • Open the lid of the cooker, add a little water and beat the cooked dal really good with whisk.
  • Heat up oil in a pan.
  • Add mustard seeds and let it pop up.
  • Add cumin seeds and let it splutter.
  • Add hing, curry leaves and vatan or masala.
  • Mix well and fry for about 2-3 minutes.
  • Add turmeric powder and mix well.
  • Add cooked dal into the tadka, water to adjust the consistency and mix well.
  • Add salt and mix well. Simmer on medium heat for about 5-6 minutes.
  • Ghuta is all ready.
  • It goes well with bhakari, chapatti or fulka too.
  • It goes well with steamed rice.
  • This dal serves enough for 4 people.
