Ingredients

  • 2 cups finely chopped Kardai
  • Finely chopped Green chilies
  • 1/4 cup Tur dal
  • Raw peanuts
  • 1 tsp Oil
  • Cumin seeds
  • 7~8 roughly crushed Garlic cloves
  • Red chili powder (Optional)
  • Turmeric powder
  • 1 cup thick Buttermilk
  • 1 tbsp Besan
  • Salt to taste

Instructions

  • Take kardai and wash it really well.
  • Soak tur dal for 2 hours.
  • Add kardai into a pressure cooker. Add one glass of water.
  • Add soaked tur dal, green chili, and raw peanuts.
  • Mix well and close the lid. Cook on medium heat until 2 whistles.
  • Heat oil in a pan. Add cumin seeds and let them sizzle up.
  • Add garlic cloves and green chili. Fry until garlic turns light golden in color.
  • Add red chili powder. You can avoid red chili powder if you don’t like it.
  • Add turmeric powder and mix well.
  • Add cooked kardai in it. Mix well and lower down the heat.
  • Add thick buttermilk. Lower down the gas while adding buttermilk.
  • Add besan and salt to taste. Mix everything well together.
  • Cook the sabzi on medium heat for about 7-8 minutes until the rawness of besan vanishes.
  • Kardai sabzi is already.
  • This sabzi should have medium consistency, neither too thick nor too thin.
  • You can make this sabzi thicker by adding more besan to it.
  • This sabzi goes well with hot bajri or jawar bhakari with lots of ghee.
  • You can also have this with rice. Also, you can make palak sabzi using this method.
