Ingredients

  • 2 medium size sliced Onions
  • 5~ 6 boiled Eggs
  • 5~6 Garlic cloves
  • 1” Ginger chopped
  • 1 tbsp Kashmiri chili powder
  • 1 tbsp Kanda lasun masala
  • Salt to taste
  • 4 tbsp sliced dry Coconut
  • 4~5 tsp Oil
  • Finely chopped Coriander leaves

Instructions

  • Heat up 1 tsp Oil in a pan.
  • Add onion, garlic, ginger, dry coconut and mix well.
  • Fry on medium heat until it turns nice brown.
  • Turn off the gas and let it cool down a little.
  • Transfer everything into a blender jar and blend it into fine paste.
  • Use minimum water while blending. Masala paste is already.
  • Heat up 3 tsp oil in a pan.
  • Add masala paste and mix well.
  • Fry the masala on medium heat for about 3-4 minutes.
  • Add kanda lasun masala, kashmiri red chili powder and mix well.
  • You can use garam masala or kitchen king masala instead of kanda lasun masala.
  • You can use deghi mirch powder in place of kashmiri red chili powder.
  • You can increase the quantity of kanda lasun masala if you want the curry to be spicy or hot.
  • Fry for about 2-3 minutes more until spices release oil.
  • When spices begin to release oil add hot water and mix well.
  • Add salt and mix well.
  • Cook the gravy on medium heat for about 4-5 minutes.
  • Boil and peel the eggs.
  • Cut them into half and drop them into the gravy facing the yolk portion upwards.
  • Cover and cook the curry on medium heat for about 5 minutes.
  • Turn off the gas and anda curry is already.
  • Garnish with coriander leaves.
  • You can serve anda curry with jawar or bajra bhakari.
  • It goes well with roti or fulka too.

Notes

  • If you add water in masala while blending then while frying masala in oil it may splash out on the gas stove. So try to use minimum water while blending or don’t add any water at all.
  • Always add hot water in hot spices so that the gravy gets nice texture & color.
