Ingredients

For Coating:

  • 1/2 cup Besan/gram flour
  • 1 tbsp Rice flour
  • Turmeric powder
  • Salt to taste
  • A pinch Baking soda
  • Water

For Stuffing:

  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • A pinch Asafoetida
  • 6 – 8 Curry leaves
  • Chili garlic paste (5-6 garlic cloves and 2-3 green chilies)
  • Turmeric powder
  • 2 big, boiled, peeled, Mashed Potatoes
  • Salt to taste
  • 1/2 tsp Lemon Juice
  • Finely chopped Coriander leaves

For Vada:

  • Oil for frying

For Chutney:

  • 2 cloves Garlic
  • 1 tbsp Red chili powder
  • Salt to taste

Instructions

For coating:

  • In a mixing bowl, take besan.
  • Add rice flour, turmeric powder, salt, and baking soda. Mix well. Add water.
  • Prepare a batter with medium consistency.
  • Take care that no lumps should be formed. The coating is ready.

For stuffing:

  • Heat a pan on medium heat. Add oil.
  • Add mustard seeds. Let it sizzle up.
  • Add asafoetida, curry leaves, and chili garlic paste. Mix well. Fry for a minute.
  • Turn off the heat and add turmeric powder.
  • Once the tadka is a bit cooled add boiled potatoes.
  • Add salt, lemon juice coriander leaves. Mix well. Stuffing is ready.
  • Take a big spoon of stuffing and roll it in the shape of vada.

For vada:

  • Heat the oil on medium heat. 
  • Mix the previously prepared batter well again.
  • Dip the vada in the batter. Coat the batter from all sides and fry it.
  • Fry from both sides until the vadas get reddish color.
  • Once done, remove from oil.

For Chutney:

  • Add remaining batter into hot oil and fry until it is crisp.
  • Take it out on a tissue paper.
  • Transfer it into a blender pot. Add garlic cloves, red chili powder, and salt.
  • Blend in into a powder.

Serving:

  • While serving apply imli (tamarind) chutney on one side of bread.
  • Put vada on it and add red chutney and serve.
