Ingredients

For Masala:

  • 1 tbsp Coriander seeds
  • 1 Star anise
  • Cloves
  • 1 Cinnamon stick

For Masale Bhat:

  • 1 tbsp Oil
  • Mustard seeds
  • Cumin seeds
  • 4~5 Bay leaves
  • Finely chopped Onion
  • 1 tbsp grated Ginger
  • Green chili
  • Red chili powder
  • Turmeric powder
  • Goda masala
  • Cauliflower
  • 1 medium peeled and chopped Potato
  • Finely chopped Carrot
  • Green peas
  • Finely chopped Tomatoes
  • Peanuts (Do not roast)
  • 1 cup Rice
  • 1 1/4 cup Water
  • Salt to taste
  • 1 tsp Ghee (Optional)
  • Finely chopped Coriander leaves
  • Grated fresh Coconut

Instructions

For Masala:

  • Heat a pan on medium heat. Add coriander seeds, star anise, cloves, and cinnamon stick.
  • Dry roast on medium heat for 4-5 minutes.
  • Take the spices out in a blender pot. Blend it into coarse powder.

For Masale Bhat:

  • Heat oil in a pan. Add mustard seeds and let them splutter.
  • Add cumin seeds and let them pop up. Add bay leaves. Mix well.
  • Add onion and stir well. Cook for 4-5 minutes.
  • Add grated ginger, green chili, red chili powder, turmeric powder, and goda masala.
  • Mix well and cook for a minute.
  • Add potato and cauliflower and mix well.
  • Cover and cook for 4-5 minutes. Remove the lid and mix well.
  • Add carrots, green peas, tomato, and peanuts. You can add vegetables of your choice. Stir well.
  • Cook for a minute and add rice (surati colam). Rice is just washed and not soaked. Mix well.
  • Add water. Add salt and freshly ground masala. Mix well and bring it to boil on high heat.
  • Once the rice comes to boil lower the heat to medium and add ghee (Optional).
  • Cover and cook medium heat until rice absorbs all the water.
  • Once the rice absorbs all the water, lower the heat to the lowest and cook for 15 minutes.
  • Turn off the heat. Remove the lid and mix well.
  • While serving garnish with ghee, coriander leaves, grated fresh coconut.
