Ingredients

Kairichi dal

  • 1/2 cup Chana dal
  • 1 chopped Green chilli
  • 1/2” chopped Ginger
  • 1 shredded Kairi / Raw mango
  • Finely chopped Coriander leaves
  • Salt to taste
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • Curry leaves
  • 1/2 tsp Turmeric powder

Khamang Kakdi

  • 1 Cucumber
  • 1/2 tsp Green chilli paste
  • 1 tbsp roasted Peanut powder
  • 1 tbsp shredded fresh Coconut
  • 1 tsp Sugar
  • Salt to taste
  • Finely chopped Coriander leaves
  • 1 tsp Lemon juice
  • 1 tsp Ghee
  • 1/2 tsp Cumin seeds
  • a pinch of Hing

Aamras

  • 2 Mangoes
  • 2~3 tsp Sugar

Kadhi

  • 1 liter Buttermilk
  • 1 tbsp Besan
  • 1 tsp Sugar
  • Salt to taste
  • 1 tsp Ghee
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • Chopped Green chilli
  • Curry leaves
  • 1/2 tsp Fenugreek seeds
  • 2 dry Red chilis (Optional)
  • Finely chopped Coriander leaves

Khichadi

  • 1/2 cup Rice
  • 2 tbsp split Green grams
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 3~4 chopped Garlic cloves
  • A pinch of Hing
  • Curry leaves
  • 2 chopped Green chilis
  • 1/2 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Red chilli powder
  • Water
  • Salt to taste
  • 1 tsp Ghee (Optional)

Jwariche Dhirde

  • 1 cup Jawar flour
  • 1 tbsp Wheat flour
  • 1/2 tsp Green chilli paste
  • 1 tsp Garlic paste
  • 1/2 tsp Ajwain / Carom seeds
  • Salt to taste
  • Water
  • Oil

Veg thali recipe

Instructions

For Kairichi Dal

Step 1: Wash chana dal really good 2-3 times and soak it in enough water for about 4 hours.

Step 2: Drain all the water from it and transfer it into a blender jar.

Step 3: Add green chilli, ginger and blend it together into paste. Transfer the dal into a bowl. 

Step 4: Grate kairi into long shreds and add it into the blended dal.

Step 5: Add coriander leaves, salt and mix well.

Step 6: Heat up oil in a pan and add mustard seeds, cumin seeds, hing, curry leaves, turmeric powder.

Step 7: Mix well and add this tadka into the dal.

Step 8: Mix well and kairichi dal is all ready.

Khamang Kakdi

Step 9: Wash and peel cucumber.

Step 10: Chop it into small pieces and add green chilli paste, roasted peanut powder, fresh coconut, sugar, salt, coriander leaves.

Step 11: Mix everything well together and add lemon juice. Mix well.

Step 12: Heat up ghee in a pan and add cumin seeds.

Step 13: When cumin seeds pop up add hing and mix well.

Step 14: Add this tadka into kakdi mixture and khamang kakdi is all ready.

Aamras

Step 15: Wash mangoes really good and cut of stem part.

Step 16: Make 4 slits on all 4 sides and peel off the skin.

Step 17: Chop the mango into pieces and transfer them into a blender jar.

Step 18: Add sugar and blend it together into smooth paste. Aamras is all ready.

Kadhi

Step 19: Take buttermilk in a bowl and add  besan, sugar, salt.

Step 20: Mix everything well together and keep it aside.

Step 21: Heat up ghee in a pan and add mustard seeds.

Step 22: When mustard seeds pop up add cumin seeds and mix well.

Step 23: Add hing, green chilli, curry leaves, fenugreek seeds and mix well.

Step 24: Add buttermilk and mix well.

Step 25: Add dry red chilis and bring it to boil.

Step 26: Add coriander leaves and mix well Kadhi is all ready.

Khichadi

Step 27: Wash rice, split green gram together really good 2-3 times.

Step 28: Heat up oil in a cooker and add mustard seeds, cumin seeds, garlic, hing, curry leaves, green chilis and fry for few seconds.

Step 29: Add turmeric powder, coriander powder, red chilli powder and mix well.

Step 30: Add rice, dal and mix well.

Step 31: Add water, salt and mix well.

Step 32: Add ghee and mix well.

Step 33: Close the lid and cook on high heat until pressure is built up.

Step 34: When steam begins to release reduce the heat to low and cook for 15 minutes.

Jwariche Dhirde

Step 35: Take jawar flour in a bowl and add wheat flour, green chilli paste, garlic paste, carom seeds, salt.

Step 36: Mix well and add a little water at a time to make runny batter.

Step 37: Heat up a pan on medium heat and grease it well with oil.

Step 38: Add the batter on the starting along the edge and finish off at the center.

Step 39: Cover and cook for about 2-3 minutes.

Step 40: When the edges begin to leave the pan remove the lid and flip the dhirde over and cook well from other side too.

Step 41: When dhirde is cooked well from both sides take it off into a dish and jwariche dhirde is all ready.Quick veg thali recipes

 

Notes

  • You can take 1 portion curd and add 2 portions water. Beat it really good to make buttermilk for kadhi.
  • If you want to skip besan then switch off the gas once tadka in ready.
  • When the tadka cools down a little add buttermilk in it and turn on the gas on very low heat.
  • Adding red chilis in kadhi is optional. You can skip it if you don’t want.
  • Adding ghee in khichadi is optional. You can skip it if you don’t want.
