Ingredients

  • Oil
  • 2 Chapattis
  • 4 Eggs
  • Finely chopped Onion
  • Finely chopped deseeded Tomato
  • Finely chopped Capsicum
  • Finely chopped Coriander leaves
  • Chili flakes
  • Mixed herbs
  • Finely chopped Green chili
  • Chat masala
  • Mozzarella cheese

Quick anda paratha

Instructions

Step 1: Brush oil at the base of the pan and place a chapatti.

Step 2: Break egg and spread egg white first on chapatti and add egg yolk carefully on it.

Step 3: Spread onion, tomato, capsicum, coriander leaves in between gaps on the chapatti.

Step 4: Sprinkle chili flakes, mixed herbs, green chili, chat masala, mozzarella cheese and cover it with another chapatti.

Step 5: Turn on the gas on medium heat.

Step 6: Cover and roast the chapatti well for about 5 minutes from lower side.

Step 7: Remove the lid and scrap the edges of chapatti with the help of spatula if egg white is stuck to the edges.

Step 8: Once the edges are loosen spread oil on upper side of the chapatti.

Step 9: Place a dish on the pan and flip it over into the dish.

Step 10: Slide the chapatti carefully into the pan again facing uncooked side to the base.

Step 11: Roast again for about 3-4 minutes until lower side turn nice and crispy.

Step 12: Turn off the gas and transfer the chapatti into a dish.

Step 13: Cut it into any shape you want and anda poli is all ready.

Notes

  • You can use butter in place of oil.
  • You can break egg in a katori and then transfer it on chapatti.
  • You can use spices of your choice.
  • You can make combinations of spices according to your choice.
  • You can use red chili powder in place of chili flakes.
  • You can spread mayonnaise on the chapatti if you want.
  • You can use processed cheese in place of mozzarella cheese.
  • You can serve it as it is or with some mayonnaise dipping.
  • This is enough breakfast for 2 people.
