Ingredients

  • Oil 3 tsp
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • pinch of Hing
  • 1 big Onion finely chopped
  • 1 tsp Ginger Garlic paste
  • 1 1/2 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 Tomato chopped
  • 1 tsp Red Chilli powder
  • 1 Potato peeled and chopped
  • 4 to 5 Baingans chopped
  • 1 tsp Garam masala
  • 2 tsp Tomato Sauce

Instructions

  • Peel potatoes and cut into small cubes. Wash and cut baingans into big pieces.
  • Heat oil in a kadhai, add mustard seeds, cumin seeds, a pinch of hing, onions, mix and fry till it becomes translucent.
  • Add ginger-garlic paste and cook till the raw smell from ginger-garlic goes away.
  • Add coriander powder, cumin powder, mix cook for 2 minutes.
  • Add tomatoes, mix and cook for 2 mts.
  • Add red chili powder, mix and cook till oil separates from the spices.
  • Add tomato sauce, mix and cook for a minute.
  • Add potatoes, sprinkle some salt, water, mix, cover, and cook for 15 minutes.
  • Add baingan, some salt, mix, cover, and cook till it's cooked properly.
  • Add some garam masala. Garnish with chopped coriander leaves.

Notes

  • Add some water for gravy consistency.
  • Once potatoes and baingans are cut, add them in cold water so that they will no discolor.
