Summer special 4 Different Lassi

These lassi are very to make and taste really nice. Lassi is a popular summer special drink. We already have seen lassi recipes. But today’s recipe is special in the way that we are making nice, creamy curd first and then lassi from it keeping the malai layer intact. Having that malai or cream while drinking lassi is like cherry on the cake. We will be adding that malai layer on our lassi today. Here are 4 different flavored lassis namely dry fruit, rose, paan and mango. You can try these lassis at home.

For making lassi first we need curd. Today we will be making curd and then 4 different lassi from it. Curd is beaten to buttermilk first and then flavors are added. lassi is basically flavored buttermilk. But lassi is thicker than buttermilk. It is sweet and salty too. In scorching heat having lassi is a pure bliss. It is a testy and healthy drink.

Ingredients

For Curd

  • 1 liter full cream or full fat Milk
  • 2 tsp Curd

For Dry Fruit Lassi

  • Curd
  • 2~3 tsp powdered Sugar
  • A drop of kewra essence
  • Finely chopped Dry nuts

For Rose Lassi

  • Curd
  • 1 tsp Gulkand
  • 2~3 tsp Rose syrup

For Paan Lassi

  • Curd
  • 1 tsp Fennel seeds
  • A little Cardamom powder
  • 1 tsp Gulkand
  • 5 Beetle leaves
  • 1 tsp Khas syrup
  • 1 tsp powdered Sugar

For Mango Lassi

  • Curd
  • 2 tsp powdered Sugar
  • 3~4 tsp Mango pulp
  • Few finely chopped Dry nuts

Instructions

For Curd

Step 1: Heat up milk in a pan and let it cool down. 

Step 2: When the milk is lukewarm fold the layer of cream and add curd as virajan in it.

Step 3: Mix well with a whisk or ravi without disturbing the upper malai layer.

Step 4: Set the layer of cream as it is, cover and set it overnight.

Step 5: When curd sets then transfer it into freeze so that it won’t turn sour.

For Dry Fruit Lassi

Step 6: Take curd and move the layer of cream a little aside.

Step 7: Take curd below that malai layer into pot and add sugar, kewra essence.

Step 8: Beat it well with a whisk or ravi.

Step 9: Add dry nuts and mix well with whisk.

Step 10: Pour lassi into a serving glass and add the malai from curd.

Step 11: Garnish with few finely chopped dry nuts.  Dry fruit lassi is all ready.

For Rose Lassi

Step 12: Take curd in a pot and add gulkand, rose syrup.

Step 13: Beat it really good with a whisk or ravi.

Step 14: Pour the rose lassi into a serving glass and add malai from the curd.

Step 15: Garnish with rose syrup. Rose lassi is all ready.

For Paan Lassi

Step 16: Take fennel seeds, cardamom powder in a blender jar and blend into a little coarse powder.

Step 17: Add gulkand, chopped beetle leaves and blend everything into paste. Paan masala for paan lassi is ready.

Step 18: For making paan lassi take curd into a pot and add 2 tsp paan masala, khas syrup, powdered sugar.

Step 19: Beat everything well together with a whisk or ravi. 

Step 20: Pour paan lassi into a serving glass and add malai from the curd, few tutti fruit. Paan lassi is all ready.

For Mango Lassi

Step 21: Take curd in a pot and add powdered sugar, mango pulp.

Step 22: Beat it really good with a whisk or ravi.

Step 23: Pour mango lassi into a serving glass and garnish with few dry nuts. Mango lassi is all ready.

Notes

  • The milk should be warm or it won’t set.
  • If the milk is too hot then also it won’t set.
  • You can add a little water if needed while blending the paan ,masala. 
  • You can blend mango lassi in blender too.

Servings

This is a very easy and simple recipe. You can serve it cold once are ready. Kids will surely love it. You can store these lassi in freeze for a day and serve whenever needed.
