Ingredients

  • 1 cup Urad dal
  • 1 tbsp Rice flour
  • 2 Finely chopped Green chillies
  • 7~8 Curry leaves
  • 1 tsp Grated Ginger
  • Salt to taste
  • Oil for frying

Instructions

  • Take urad dal into a strainer and wash it really good with water for 2-3 times.
  • Transfer the dal into a big bowl. Soak urad dal in enough water for about an hour.
  • Strain the soaked through a sieve and drain all water.
  • Transfer the soaked dal into a blender jar and blend into a little coarse paste.
  • Do not add any water while blending. Or use minimum water while blending.
  • After a few pulses move the blended dal to the center of the blender pot with the help of a butter knife or spoon and blend again.
  • Transfer the blended dal into a bowl.
  • Beat the blended dal really good for about 10 minutes.
  • The more you beat the dal the vadas will be more fluffy and light.
  • Add rice flour, ginger, green chili, curry leaves, and salt to taste. Mix well.
  • Heat up oil in a pan.
  • Take some water in a pot and take a katori with a flat surface.
  • Flip the katori over and clean the base of katori.
  • Spread a little water on the flat surface.
  • Take 2 spoons and take some batter in it.
  • Make a round ball of the batter with the help of spoons.
  • You can do it with your hands too if you want.
  • Put the batter ball on the katori.
  • Dip a finger into the water, give a round shape to the batter ball, and make a hole at the center.
  • Flip the katori over the pan and drop the vada into the hot oil.
  • Fry the vadas on low heat until these get the nice golden color from all sides.
  • Take vadas out of out, drain excess oil, and transfer these into a dish.

Notes

  • Rice flour gives nice binding and also helps in making vadas crispy and crunchy.
