Ingredients

  • 2 cups Maida
  • Salt to taste
  • 1/4 tsp Ajwain / Carom seeds
  • 3 tsp hot Oil
  • 1/2 cup + 1~2 tsp Water
  • Oil for frying
  • Red chili powder
  • 1/2 tsp Cumin powder
  • Black salt

Instructions

Step 1: In a dish take maida, salt, ajwain, hot oil and mix well.

Step 2: Add a little water at a time and knead stiff dough.

Step 3: Transfer the dough into a bowl and spread a little oil on it.

Step 4: Cover and rest the dough for about 30-45 minutes.

Step 5: Take the dough and knead it to make smooth and even.

Step 6: Take small portion of the dough and make it smooth and even.

Step 7: Roll it into as thin chapatti as possible.

Step 8: Cut it into 16 equal parts and take one of it.

Step 9: Lift the broad end and roll it carefully.

Step 10: Spread a little water at along the end and seal it well.

Step 11: Press it a little carefully so that those won’t open up while frying.

Step 12: Heat up oil on low to medium heat in a pan.

Step 13:Drop mathari roll into hot oil and fry well on low to medium heat until these get nice golden color from all sides.

Step 14:When mathari is fried well take it out, drain excess oil and transfer into a dish.

Step 15: Take red chili powder, cumin powder, black salt in a bowl and mix well.

Step 16: Sprinkle the masala on the mathari rolls and toss them well.

Step 17: Mathari rolls are all ready.

Step 18: You can store them in an airtight container for about a month.  

Notes

  • You can use wheat flour in place of maida.
