Ingredients

  • 2 medium size Potatoes
  • 2 cups Whole wheat flour
  • 1 tsp Coriander powder
  • 1/2 tsp Red chili powder
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Ajwain / Carom seeds
  • Salt to taste
  • 2 tsp Finely chopped coriander leaves
  • Water
  • Oil

Instructions

  • Boil potatoes and peel them. Grate potatoes.
  • Add wheat flour, coriander powder, red chili powder, turmeric powder, ajwain, salt and coriander leaves.
  • Mix dry masala, flour and potato really good.
  • Add a little water at a time and knead dough. The dough should have medium consistency.
  • It should not too soft or too thick.
  • Add oil and knead the dough again.
  • Coat the dough with little oil and transfer it into a bowl.
  • Cover and rest the dough for about 30 minutes.
  • Take a little dough and make a small ball from it.
  • Roll puri from the dough ball.
  • You can use a little oil while kneading puri if it sticks to the rolling board or pin.
  • When puri is ready keep it aside. Roll out all puris like this.
  • Heat up oil in a pan to fry puris.
  • When oil is enough hot, drop a puri in it.
  • As soon as you drop puri in oil, press it a little with spatula. Pressing helps to puff up the puri.
  • After 2-3 minutes, flip over and fry from other side for another 2-3 minutes.
  • Fry puri on medium high heat.
  • Take out of oil and put it into a dish.
  • Aloo puri is already.
