Undalkal is a Konkani recipe. Mostly this recipe is prepared on the auspicious occasion of Ganesh chaturthi. Undalkal looks awesome and tastes just fantastic. It turns out nice, crispy and crunchy. Then this is the best alternative for you. You can call these disintegrated or inverted ukadiche modak. This is a very easy and simple recipe. Ingredients

For Ukad

  • 1 cup Water
  • 1 tsp Jaggery / Gudh
  • 1 tsp Ghee
  • 1 cup Rice flour

For Undalkal

  • Ghee
  • Chopped Dry nuts
  • 1/2 cup shredded fresh Coconut
  • 1/4 cup jiggery / Gudh
  • Cardamom powder
  • Nutmeg powder

 

Instructions

For Ukad

Step 1: Heat up water in a pan and add gudh, ghee.

Step 2: When the mixture begins to boil add rice flour, turn the heat to low and mix in quickly.

Step 3: Turn off the gas, cover and rest the mixture for about 10 minutes.

Step 4: Take the ukad into a dish and knead it well.

Step 5: Make small balls form the dough and keep them aside

For Undalkal

Step 6: Heat up ghee in a pan.

Step 7: Drop the ukad balls into the ghee and shallow fry until these get nice golden color from all sides.

Step 8: Take the balls out into a dish.

Step 9: In the same pan add dry nuts and fry a little.

Step 10: Add fresh coconut and fry a little.

Step 11: Add gudh and fry everything together for about a minute.

Step 12: Add cardamom powder, nutmeg powder and mix well.

Step 13: When bubbles begin to appear on upper side of the paratha, flip it over and roast it well from other side.

Step 14: Add the fried undalkal and coat it well with the gudh-coconut mixture.

Step 15: Undalkal is ready.

Step 16: Garnish with few dry nuts.

Notes

  • You can skip the dry nuts if you don't want.

You can serve undalkal as it is or with ghee. It loks nice and tastes just awesome. You can offer this as naivedya to your Ganapati bappa.
