Ingredients

  • 1 liter full cream Milk
  • 2 tsp Almonds
  • 2 tsp Cashew nuts
  • 2 tsp Melon seeds / Magaj seeds
  • 1 tsp Fennel seeds
  • 7~8 Black pepper corns
  • Cardamom
  • Few Saffron strands
  • 1 tsp Gulkand
  • 2 tsp Sugar

 

Instructions

Step 1: For making thandai masala take almonds, cashew nuts, melon seeds, fennel seeds, black peppercorns, cardamom in a blender jar and blend it into powder.

Step 2: Do not blend continuously but pulse it to blend into powder.

Step 3: Strain the masala through a sieve and thandai masala is ready.

Step 4: Heat up milk in a pan.

Step 5: When the milk is hot enough mix few saffron strands into it.

Step 6: Add gulkand and mix well. We are adding gulkand in place of dry rose petals.

Step 7: Add sugar and mix well.

Step 8: Simmer everything well together for about 2 minutes.

Step 9: Add 2-3 tsp thandai masala and simmer for another 2- 3 minutes.

Step 10: Turn off the gas and let it cool down completely.

Step 11: Serve the thandai and garnish with few almond and pistachios slices.

Notes

  • You also can soak almonds, cashew nuts, peel the almonds and blend them.
  • You can add dry rose petals in the masala while blending.
  • You can mix the thandai masala in chilled milk and serve.
  • You can store the masala in air tight container for about 2-3 months.
