Dudhi Bhopala Uttapam

Ghavane is a traditional Maharashtrian recipe. Dudhi Bhopala uttapam or ghavane is a real quick and easy to make recipe. Ghavane doesn’t need many ingredients. You can make ghavane with the ingredients easily available in your pantry. You can make different variations in ghavane. Traditional ghavae are made from rice flour. At some places ghavane are made by soaking rice, grinding it and then using the fermented batter for making ghavane.

I have already uploaded few ghavane recipes like tomato ghavane, ghavane, amboli, Rava Utappam etc. It can be a quick evening snack or healthy breakfast recipe too. These dudhi bhopala ghavane can be really healthy breakfast. This recipe has it own health benefits but many people don’t like it. So this can be a fantastic way to make them eat healthy dudhi bhopala or bottle gourd. This uttapam is made with rava and rice flour those are easily available in your kitchen. You can call it as ghavane, uttapam or amboli too.

Ingredients

  • 3~4 Green chilies
  • 7~8 Garlic cloves
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Ajwain / Carom seeds
  • 1 cup fine Suji
  • 1/4 cup Rice flour
  • Salt to taste
  • Dudhi bhopala / Bottle gourd
  • 1/4 cup Curd
  • 1 cup Water
  • Finely chopped Coriander leaves
  • 1/2 tsp Eno fruit salt
  • 1/4 cup Water
  • Oil

Instructions

Step 1. For making basic masala take green chilies, garlic, cumin seeds, carom seeds in a blender jar.

Step 2. Blend everything into coarse paste. No need to blend into fine paste.

Step 3. Basic masala for making ghavane is ready.

Step 4.Take fine rava, rice flour, salt, blended masala in a bowl and mix well.

Step 5.Peel the bottle gourd

Step 6.Grate it directly into rava mixture.

Step 7. Add curd and mix everything well together.

Step 8.Add water and mix well.

Step 9. Add coriander leaves and mix well. The batter should be a little runny.

Step 10. Rest the batter for about 10-15 minutes.

Step 11. Add eno fruit salt, water and mix in quickly.

Step 12. Heat up a pan on medium heat and brush oil on it.

Step 13. Add ladleful batter at the center of the pan and spread it.

Step 14. Cover and cook for about 2-3 minutes.

Step 15.  Remove the lid and cook until lower side gets nice browning.

Cook well.

Step 16. Spread a little oil on upper side and flip it over.

Step 17. When lower side is also roasted well, take it off into a dish.

Notes

  1. You can use buttermilk or lemon juice in place of curd.
  2. You can add 1/4 tsp baking soda in place of eno fruit salt.
