We already have seen many recipes made from vange. Today here is another version of vange that is made using kala masala. We are adding batata to it to enhance the taste. Ingredients

  • 3 tsp dry shredded Coconut
  • 4 tsp roasted Peanut powder
  • 1/2” chopped Ginger
  • 4~5 Garlic cloves
  • Coriander leaves
  • 2 tsp Oil
  • 1 big Potato
  • 1 tsp Kala masala
  • Red chili powder
  • Water
  • Finely chopped Tomato (Optional)
  • Vangi
  • Salt to taste

Instructions

  • In a blender jar take coconut.
  • Add roasted peanut powder, ginger, garlic cloves, coriander leaves and blend everything into smooth paste.
  • Add a little water while blending to make smooth paste. Vatan or masala is all ready.
  • Heat up oil in a pan.
  • Add the blended masala into hot oil and fry the masala on medium heat for about 4-5 minutes.
  • Peel the potato and cut it vertically into pieces.
  • When masala begins to release oil add kala masala and mix well.  
  • You can use any other stored masala in place of kala masala.
  • Add red chili powder and fry well.
  • Add potato and mix well. You can steam the potato for a minute or two without adding water.
  • Add water and mix well.
  • Cover and cook until potato is 50-60% cooked or for about 5 minutes.
  • Add tomato and mix well. You can skip tomato if you don’t like as it is optional.
  • Cover and cook for few minutes.
  • Cut the stem part of vangi and cut it into 4 pieces.
  • Add the chopped vangi into potato and mix well.
  • Cook for another 6-7 minutes.
  • Add salt and mix well.
  • Vangi batata fodi in kala masala is all ready.
  • You can have it with rice, bhakari or chapatti too.
