Ingredients

  • 1 1/2 cup Whole wheat flour
  • 3 cups Grated Radish
  • 1 tsp Garam masala
  • 1/4 tsp Turmeric powder
  • 1 tbsp Coriander powder
  • 1 tsp Green chili-Garlic paste
  • 1/2 tsp Chat masala
  • 1/2 tsp Red chili powder
  • Coriander leaves
  • Salt to taste
  • Oil

Instructions

For making Dough:

  • Take wheat flour in a dish and add salt.
  • Mix well and add a little water at a time and knead dough.
  • The dough should neither too thick nor too thin.
  • Spread a little oil over the dough, cover and rest it for about 15-20 minutes.

For Making Stuffing:

  • Take radish and squeeze as much water as possible.
  • Add garam masala, turmeric powder, coriander powder, green chili-garlic paste, chat masala, red chili powder, salt and finely chopped coriander leaves.
  • Mix well and stuffing is already.

For making Paratha:

  • Take the dough and knead it once more for about 2-3 minutes.
  • Make even and small balls from it.
  • Take one ball and make it even.
  • Dip the ball in dry flour and roll 5-6” round disc.
  • The disc should be thicker at the centre that edges so that the stuffing won’t come out while rolling paratha.
  • Add the stuffing and seal the edges as we do for making modak.
  • Remove the excess dough.
  • Again dip the ball in dry flour and roll it into a small dics.
  • Paratha is rolled.
  • Another way of rolling paratha is take a ball and divide it into 2 small balls.
  • Take one ball and roll a small, thin disc. Keep it aside.
  • Take other ball and roll s disc of about same size.
  • Spread the stuffing on this disc and cover it with other disc.
  • Seal the edges and roll the paratha again a little. Paratha is rolled.
  • Heat up a skillet on medium heat.
  • Transfer the paratha on the skillet.
  • Flip over the paratha when it begins to turn light golden from lower side.
  • Spread a little oil on it and flip the paratha over.
  • Spread a little oil on this side and roast the paratha well from both sides.
  • Paratha is already.
  • You can serve the paratha with curd, any pickle or sauce.

Notes

  • You can rub a little salt to radish and then squeeze water from it. Salt helps to release more moisture from radish.
  • Squeeze as much water as possible so that paratha won’t be too moist.
  • You can make 6 paratha from 1 1/2 cups wheat flour.
  • You can use butter or ghee instead of oil.
