Sabudana vada is crunchy, fried patty made from sabudana. Though it is a fasting recipe, it can be made at any other time. It is a good morning breakfast or evening snack recipe. These are light, crispy and taste just yummy.. Let’s learn to prepare sabudana vada.

Ingredients

  • 1 1/2 cup soaked Sabudana
  • 1 medium size boiled, peeled, mashed Potato
  • Chili-ginger paste (4~5 chillies and 1” ginger)
  • Finely chopped Coriander leaves
  • 2~3 tbsp Roasted peanut powder
  • 1/2 tsp Cumin seeds
  • 1 tbsp Varai flour
  • Salt to taste

Instructions

  • Wash the sabudana well and soak it in water for 3 hours.
  • Drain the whole water from it. Keep it covered overnight.
  • Take the sabudana in a plate. Mash it up well.
  • Add mashed potato, chili-ginger paste (Ginger optional), coriander leaves, roasted peanut powder, cumin seeds, varai flour and salt.
  • Mix well. Make dough out of it.
  • Grease your hands with oil and make small vadas from the dough.
  • Heat oil in a pan. When oil is enough hot, put the vadas in it with the help of a spoon.
  • Once you put the vadas in hot oil stand aside for a few seconds as sabudana may pop out of it.
  • Fry until the vadas are golden in color.
  • After 3-4 minutes flip the vadas over with the help of fork.
  • Fry from other side as well. Remove the vadas in a plate.
  • Vadas are ready. You can serve these with coconut chutney or upawasachi chutney.
