Ingredients

  • 1/2 cup Tamarind
  • 1 cup Water
  • 1 cup Jaggery
  • 1/2 tsp Black salt
  • 1/4 tsp Cumin powder
  • 1/4 tsp Red chili powder
  • 1/4 tsp Chat masala
  • A pinch of Salt
  • 6~7 Green chilies
  • 3~4 Garlic cloves
  • A piece of Ginger
  • Salt to taste
  • Murmure / Puffed rice
  • Finely chopped Onion
  • Finely chopped Tomato
  • Finely chopped Coriander leaves
  • Farsan
  • Shev / Bhujia

Instructions

  • Soak tamarind in water overnight.
  • Heat up tamarind water and add jaggery. Let all the jaggery dissolve.
  • Turn off the gas and mash the pulp with a potato masher.
  • You can cook tamarind and jaggery together on medium heat for about 1-2 whistles.
  • Strain the tamarind pulp through a strainer.
  • Add a little water in leftover tamarind pulp and mash again.
  • Repeat this process 3-4 times.
  • Add black salt, cumin powder, red chili powder, chat masala, and salt.
  • Mix well and sweet and sour chutney is already.
  • Take green chillies, garlic cloves, ginger, and salt into a blender pot.
  • Blend everything into a coarse paste.
  • You also can use mortar and pestle. Green chilli thecha is already.
  • Take murmure into a pot and add green chilli thecha according to your taste. Mix well.
  • Add onion, tomato, coriander, and farsan. Mix everything well together.
  • Add sweet and sour chutney according to your taste and mix well.
  • Oli bhel is already.
  • Serve bhel into a dish and again add sweet and sour chutney.
  • Add again onion, tomato, coriander, farsan and shev and bhel is ready to serve.

Notes

  • Mix bhel at the time of serving only. Do not mix bhel beforehand because of murmure turn soft, soggy and chewy.
