Ingredients

  • 1 cup Chole
  • 2 1/2 cups Water
  • 2 cups Maida
  • 1/4 cup Fine Rava / Sooji
  • Salt to taste
  • 2 Pinches Baking soda
  • 1 tbsp Oil
  • 1/4 cup Dahi / Curd
  • 1/2 cup Water
  • 1 tsp Oil
  • 4 tbsp Oil
  • 1 tsp Cumin seeds
  • 3~4 Bay leaves
  • 2 cups Finely chopped Onion
  • 3 medium-size finely chopped Tomato
  • 1 tsp Ginger-Garlic paste
  • 1 tbsp Coriander powder
  • 1 1/2 tbsp Bedgi chili powder
  • 1 tbsp Kitchen king masala
  • 1/2 tsp Cumin powder
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • Oil for frying

Instructions

  • Take chole into a bowl and wash them really good 2-3 times with water.
  • Add water and soak chole over night.
  • Next morning drain all the water and transfer chole into pressure cooker.
  • Add enough water to soak chole.
  • Close the lid and cook on medium heat until 7-8 whistles.
  • In a dish take maida.
  • Add fine rava, salt to taste, baking soda, oil and curd.
  • Mix well and add a little water at a time and knead thick dough.
  • The consistency of the dough must be thick and not thin.
  • Add oil and knead the dough again until it becomes soft for 5-7 minutes more.
  • Transfer the dough into a bowl and coat well with little oil.
  • Cover and give it resting time of at least 3 hours.
  • Heat up 4 tsp oil in a pan.
  • Add cumin seeds, bay leaves and onion.
  • Mix well and fry until onion turns light golden for about 5-6 minutes.
  • Add tomato, ginger garlic paste, coriander powder, bedgi chili powder, kitchen king masala, cumin powder and turmeric powder. Mix well.
  • Cover and cook until tomatoes are cooked soft for about 5-6 minutes. Tomato must be mashed well with onion.
  • If you feel masala is getting dry, sprinkle some water, cover and cook again.
  • Add boiled chole, salt to taste and mix well. You can add more water to adjust consistency.
  • Cover and cook on medium heat for about 7-8 minutes.
  • Turn off the gas and chole masala is already.
  • Take the dough and knead it once more.
  • Make small balls of dough. Make the balls nice and soft.
  • Roll bhature a little bigger that puri with the help of rolling board and pin.
  • Heat up oil in a pan and drop the plain side of bhature first in oil.
  • Let it puff up and flip over.
  • Fry from other side as well and take the bhatura out of oil, drain excess oil and transfer it into a plate.
  • Bhature are already.

Notes

  • Rava helps bhature puff up and retain their shape longer.
  • Bedgi chili powder gives nice taste and color to chole. You also can use store-bought red chili powder instead of bedgi chili powder.
  • You can add amchur powder in masala.
  • Instead of using a combination of all spices, you can use store-bought chole masala.
  • If you drop the plain side of bhatura first in oil, it will help bhatura to puff up. If you drop side with cracks first in oil, bhatura won’t puff up good enough at all.
  • You can make 8 medium sizes bhature form 2 cups maida and 1/4 cup rava
