Dhaba Style Veg Kolhapuri

Instructions

• Heat up oil in a pan.
• When the oil is enough hot add cauliflower florets, French beans, carrot, capsicum, and mix well.
• Sauté the veggies well.
• Add paneer cubes and fry for a few minutes.
• Take the veggies out into a dish.
• In the same pan add onion and fry until it gets golden brown color.
• Add tomato, garlic cloves, ginger, cashew nuts, and sauté well again.
• Transfer everything into a blender jar and blend into a fine paste.
• Heat up butter in a pan.
• When butter melts add the blended masala paste and mix well.
• Cook for about 7-8 minutes.
• Add Kanda lasun masala, red chili powder, and mix well.
• Cook for few minutes more.
• When the masala begins to release oil add water, salt, and mix well.
• Add fried veggies and mix well.
• Add green peas and mix well.
• Cook the veggies really well.
• Veg kolhapuri is all ready.
• It goes well with chapatti, fulka, roti, naan, or as a side dish with rice too.
