This is cooked in very spicy, flavorful, delicious methi leaves which is very healthy and tastes awesome. This goes very well with raita or pickle. Try out this tasty and yummy methi rice.

Ingredients

  • 1 cup Small grain rice
  • 2 cups water
  • 2 tsp Oil
  • 1 Onion sliced
  • 1 tsp Mustard seeds
  • 6 to 7 Curry Leaves
  • 1 tsp Ginger Garlic paste
  • 3 cups chopped Methi Leaves
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • 2 tsp Red Chilli powder
  • 1/4 tsp Turmeric powder
  • 1/4 cup fresh / frozen Coconut
  • 2 tsp Lemon juice

Instructions

  • Wash rice well and soak in enough water for 15 mts.
  • Separate methi leaves from stem, wash well, drain water and chop finely.
  • Heat up oil, add mustard seeds, curry leaves, sliced onion, mix and cook till onion becomes soft.
  • Add ginger garlic paste, mix and cook for minute.
  • Add methi leaves, mix well.
  • Add coriander powder, red chilli powder, turmeric powder, garam masala, mix well and cook for 2 minutes.
  • Add drianed rice, mix well, add 2 cups water.
  • Add salt, coconut and lemon juice and mix well.
  • Cover and cook for first 5 mts on high heat, next 10 mts med heat after 10 mts, simmer for 15 mts on very low heat.
  • Leave it to rest for final 10 mts.
  • Serve hot with raita, pickle or chutney!
