Akki roti is a Karnataka special breakfast recipe. It is made from rice flour. It tastes just awesome with simple chutney too. This is a very easy and simple recipe. Ingredients

  • 1 1/2 cup Rice flour
  • 1/2 cup finely chopped Onion (Optional)
  • 1/2 cup shredded Carrot
  • Finely chopped Coriander leaves
  • 1/2 cup fresh shredded Coconut
  • 1 tsp Cumin seeds
  • Salt to taste
  • 1 tbsp Green chili paste (4~5 Green chilies coarsely blended)
  • Water
  • Oil

Instructions

  • Take rice flour into a dish.
  • Add onion, carrot, coriander leaves, fresh coconut, cumin seeds, salt to taste, green chili paste and mix everything well together.
  • Adding onion is optional. You can skip it if you don’t want.
  • Add a little water at a time and knead semi soft dough.
  • The consistency of the dough should not be too stiff or too soft.
  • Take a small portion from the dough and make it nice and smooth.
  • Take an aluminium foil and spread a little oil on it.
  • Put the dough ball and pat it to make nice and thin paratha.
  • You can use any cleannapkin or plastic sheet or zip lock bag in place of aluminium foil.
  • You also can make the paratha directly into a pan.
  • But then in that case you have to use 2 pans.
  • You also can roll the paratha with a rolling pin so that it can be rolled nice & evenly.
  • Make small holes which help to escape the steam and ensure even roasting of this roti. 
  • Heat up pan on medium heat.
  • Spread a little oil on it and transfer the rolled roti it and remove the aluminium foil gently.
  • Cover and cook for about 3-4 minutes.
  • Remove the lid and flip the roti over.
  • Cook for other side for about 3-4 minutes.
  • Take the roti off the pan into a dish.
  • You can serve the akki roti with coconut chutney, tomato chutney, chili chutney or onion-garlic chutney.
  • It tastes good as it is too.
