Ingredients

  • 1cup long grain Basamati rice
  • 3 tsp Oil
  • 1/2 tsp Cumin seeds
  • 2 Bay leaves
  • 1 finely chopped Onion
  • Finely chopped Tomato
  • 1 tsp Ginger-Garlic paste
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Biryani masala
  • 1 tsp Red chili powder
  • 1 medium size chopped Potato
  • Cauliflower florets
  • Fresh Peas
  • Chopped green Beans
  • Chopped Carrot
  • 1 1/2 cup Water
  • Salt to taste
  • Few Cashew nuts (Optional)
  • 2 tsp Ghee

Veg masala pulao

Instructions

Step 1: Wash rice really good 2-3 times and soak it in enough water for at least 15-20 minutes.

Step 2: Drain all the water from soaked rice and keep it aside.

Step 3: Heat up oil in a pan and add cumin seeds.

Step 4: When cumin seeds splutter add bay leaves, onion and fry onion until it turns soft.

Step 5: When onion is about to get fried well add tomato, ginger-garlic paste and together for just 2 minutes.

Step 6: Add coriander powder, turmeric powder, biryani masala, red chili powder, and mix everything well together.

Step 7: Add potato, cauliflower, fresh peas, green beans, carrot and toss well with spices.

Step 8: Add soaked rice and mix well.

Step 9: Add water, salt, cashew nuts and mix well.

Step 10: Add ghee and cover the pan.

Step 11: Bring it to boil on high heat.

Step 12: Cook on medium heat until all the water is absorbed.

Step 13: Cook on lowest possible heat for about 10 minutes.

Step 14: Turn off the gas and let the pan as it is for another 10 minutes.

Step 15: Remove the lid and loosen rice carefully once with fork.

Step 16: Masala pulao is all ready.

Notes

  • You can use garam masala or goda masala or kala masala in place of biryani masala.
  • You can add veggies according to your choice.
  • Adding cashew nuts is optional. You can skip it if you don’t want.
