Ingredients

  • 1 cup Rajgira / Amaranth grains
  • 1 tbsp Ghee
  • 1 cup Gudh / Jaggery
  • 1 tbsp Water
  • 1/4 cup Peanuts
  • Cardamom powder to taste
  • Ghee

Instructions

  • Heat up pan and add just 1 tsp rajgira seeds in it. Let them puff up.
  • Take a bowl with a strainer on it.
  • Pour out the puffed rajgira into the strainer and strain it.
  • The puffed rajgira or lahya will remain in the strainer and seeds will be left back into the bowl.
  • Puff up rajgira in the same way.
  • You also can use store bought rajgira lahya.
  • Heat up a pan.
  • Add ghee and gudh in it.
  • When gudh melts completely, add water and cook for another 3-4 minutes to make syrup.
  • Take roasted peanut s and blend them a little.
  • Add rajgira, roasted peanuts and cardamom powder.
  • Mix everything well together.
  • Turn off the gas.
  • Take a tray and grease it well with ghee.
  • Pour out the rajgira mixture into the tray and spread it evenly.
  • Use a katori to make it even and smooth.
  • When rajgira mixture cools down little, cut vadya with the help of cutter or knife.
  • Rajgira vadi is already.

Notes

  • Adding a little water in gudh syrup helps to make vadi a little soft. If you don’t want soft vadi, do not add water into gudh. Add rajgira lahya directly when gudh melts.
  • You can make almost 3 cups rajgira lahya from just 1/2 cup rajgira seeds.
