Shenga poli means poli made from peanuts. This poli is made during Sankrant in Solapur, Pandharpur area. It tastes just awesome and is very easy to make. It has shelf life of about 7-8 days. Ingredients

  • 1 1/2 cup Wheat flour
  • 1 tsp Besan
  • Salt to taste
  • Water
  • 1 tsp Oil
  • 1 1/2 cup Peanuts
  • 3/4 cup Jaggery/ Gudh
  • Cardamom powder
  • Nutmeg powder
  • Oil / Ghee

Instructions

  • Take wheat flour into a dish.
  • Add besan, salt and mix everything well.
  • Add a little water at a time and knead the dough of medium consistency.
  • Add oil and knead the dough again to make soft and even.
  • Transfer the dough into a bowl, cover and rest it for about 30 minutes.
  • Take peanuts into a pan and roast until nice and kharpus.
  • When peanuts cool down a little peel them.
  • Transfer the peeled peanuts into a blender jar and blend into a powder.
  • Add jaggery, cardamom powder, nutmeg powder, and blend everything just once.
  • Stuffing is all-ready.
  • Knead the dough a little once more.
  • Take a small portion from the dough and make it even.
  • Make a pari from it. You can roll it into a small chapatti like we make paratha.
  • Fill as much stuffing as possible and press it.
  • Bring the edges together and close it.
  • Dip it into dry flour and roll into chapatti. Roll the chapatti carefully.
  • Heat up a pan on medium heat.
  • Transfer the chapatti on the pan and roast well on low to medium heat.
  • After roasting a little from one side flip it over and roast well from another side.
  • Spread a little oil on the upper side and flip it over.
  • You can use ghee in place of oil.
  • Spread a little oil on another side too and roast nice and kharpus.
  • When chapatti is roasted well from both sides take it off into a dish.
  • Shenga Polya is all-ready.
  • You can make 12-13 medium size Polya from 1 1/2 cup peanuts.
