Ingredients

  • 1 cup Maida / All purpose flour
  • 1/2 tsp Salt
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Kalonji / Onion seeds
  • 1 tbsp Ghee
  • 5 tbsp Water
  • For Sata:
  • 1 tsp Ghee
  • 1 tsp Maida
  • Oil for frying

Instructions

  • Take maida into a dish.
  • Add salt, cumin seeds and kalonji. Mix well and add ghee.
  • Mix ghee well with flour.
  • Add a little water at a time and knead dough.
  • The consistency of the dough should be stiff and not soft.
  • Transfer the dough into a bowl and cover.
  • Give it a standing time of 30 minutes.
  • In a bowl, take ghee. Add maida and mix well.
  • Sata is already, Keep it aside.
  • Take the dough and knead it once again.
  • Roll the dough like paratha.
  • Make it as thick as paratha. Do not roll it too thin.
  • Take sata and spread it all over the paratha evenly.
  • Roll the paratha as tight as possible. Make the roll nice and even.
  • Cut the paratha into equal size portions with the help of knife.
  • Take these into a bowl and keep covered.
  • Take one dough ball.
  • Press it a little and start to roll out.
  • Roll it into a 5-6” round puri.
  • Prick it with fork at places as we don’t want this puri to puff up.
  • Fold it into half and again fold into quarter.
  • Give it a triangular shape. Pinch the edges.
  • Do not press all of it. Keep separate layers.
  • Prick again from both sides at the interval.
  • You can make 12 nimki of regular size.
  • Heat up oil in a pan.
  • Drop the niki into hot oil and fry on medium to high heat.
  • So that these nimki will be nicely fried inside out.
  • After about 3-4 minutes, flip nimki over.
  • Fry from other side for about 3-4 minutes.
  • After it gets nice deep golden color from both sides, take the nimki out.
  • Drain excess oil and transfer nimki into a dish.
  • Nimki is already to serve with tea.

Notes

  • You can seal the edges so that nimki won’t open up while deep frying.
